Veggie Skeleton

  • Few broccoli florets
  • 2 cauliflower florets
  • ½ cucumber
  • 2-3 carrots  or a few baby carrots
  • 1.2 a red pepper
  • 250 gms mozzarella balls
  • 2  black olives
  • Red edible ink decorating pen


  • 1 tin organic chickpeas
  • 1 clove garlic
  • 1 tablespoon tahini
  • 1/2 lemon squeezed
  • 4 tablespoons of extra virgin olive oil
  • Salt to taste


  • Blitz all the hummus ingredients together in a food processor or blender and spoon into a small round bowl for the ‘face’
  • To make the ‘eye balls’ cut small eye shapes from the black olives and push into the mozzarella balls.
  • Draw on the veins with the ink pen
  • Pop the eyes into a bowl of hummus
  • Slice the red pepper for  the ‘ribs’
  • Thinly slice the cucumber in rounds for the ‘back bone’
  • Arrange veggies as seen in the image
