Sweet potato toast with nut butter, strawberries, blueberries & a sprinkle of seeds

Have you tried Sweet potato  toast for breakfast?

It’s so delicious, a great way of getting more veggies in at breakfast time and makes a change from bread.

You can top it with a sweet or savoury topping –both work really well

2 large sweet potato

Toppings of choice


  • Simply slice the sweet potato into approx 1 cm slices, lay flat on a baking tray and pop in the oven at 180’C for 40mins, flipping half way.
  •  You might need a little longer depending on the thickness of your toasts… just keep checking after 30mins until they are cooked. You can also brush with a little olive oil before baking – optional
