Spinach & Prawn Linguini

Ingredients

1 teaspoon olive oil
4 cloves garlic
300gms raw king prawns
750 gms baby spinach leaves
500 gms cherry tomatoes
4 tablespoons pesto
100mls double cream
Chilli flakes to taste
Salt & pepper to taste
400gms dried whole wheat linguini

Method

First boil the linguini in boiling water with a little olive oil and whilst that is cooking make the sauce
To make the sauce mince the garlic and fry in the olive oil, stir for 1-2 minutes being careful not to let the garlic burn
Next add 300gms raw king prawns and stir for a few minutes until they start to turn pink and translucent
Next add the spinach, cherry tomatoes, chilli and salt & pepper to taste
Stir until spinach is starting to wilt and then mix in the pesto
Finally add the double cream and serve right away
