Spinach Doughnuts

Serves - 24 mini donuts
Prep. Time - 10 mins
Cooking Time - 5 mins


  • 1 cup buckwheat flour
  • 100gms baby spinach
  • 1 small banana
  • 3 tablespoons honey
  • 1 tablespoon coconut oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 tsp baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 2 cubes melted Dark chocolate, a few pistachios – sliced and rose petals to decorate


  • Mix the spinach, banana, honey, coconut oil, egg & vanilla into a blender and blend to a smooth purée
  • Mix all the dry ingredients into a bowl and add the purée and fold in to mix all the ingredients together
  • Pour onto waffle maker/doughnut tray and bake for a few minutes according to the machine
  • I haven’t tried these on a tray in the oven but I’m guessing depending on the size of the doughnut  rings about 5-10 mins for mini doughnuts and a bit longer for larger ones?
  • Spread a little melted dark chocolate on cooked doughnuts and sprinkle with chopped pistachios & rose petals to decorate
