Pau Bhaji Fondu

When you’re dreaming of the French Alps but craving some spicy Indian food on returning from our annual ski trip… this was the result… a fusion of India meets France with pau bhaji fondu!
A great way to add more vegetables to your diet or sneak in new vegetables for children to try!
P.S. this serves 8 on purpose… you may want a double portion or you may want to freeze it for another day after all the effort of making it!

Ingredients

Method

First fry the onion in the oil until almost brown.
Next add the cinnamon, stick, cardamom, star anise, and cumin seeds.
Stir a minute and add the minced garlic & ginger
Next add all the veggies and the tomato (chopped & purée)
Finally add the salt & spices & coriander
Top up with a little water – just to cover the vegetables and leave to simmer until cooked.
Finally pop a hand blender into the saucepan & pulse the mix so it is lumpy and smoother but not the consistency of soup
Pop a large knob of butter on top just before serving
Pan fry the buttered wholemeal rolls and & cut into squares to fondue onto skewers
