Masala Roast Chicken

Spice up your roast… it’s the only way! My husband wasn’t a fan of roast dinners… until I added a little spice to them… now the whole family loves them!
I usually accompany our roasts with lots of colourful vegetables, anything goes in my opinion and everything tastes great roasted!

Serves - 4

Cooking Time - 1hr 30 mins


1.5kg whole organic chicken

Chicken marinade:

6 cloves garlic – minced
3cm chunk ginger – minced
4 teaspoons cumin seeds – toasted
6 star anise
2-3 green chillis – minced
1 teaspoon turmeric
1 teaspoon garam masala
1 knob of butter
Salt to taste



First place the garlic, ginger & chillies into a food processor and mince finely
Next, toast the cumin seeds for a couple of minutes on a frying pan on low heat
Add the cumin seeds, turmeric, garam masala, start anise, and butter to the garlic mix and mix well
Stuff the mix under the roast chicken skin
Roast the chicken for 1 hr 30 minutes @180’C fan oven until the skin is crispy and the juices run clear
