Kale & Artichoke Dip

Serves - 2
Prep. Time - 10 minutes
Cooking Time - 10 minutes


  • 150gms of artichoke hearts in oil
  • 1 Handful of chopped kale
  • 3 tablespoons cream cheese
  • 3 tablespoons Greek yogurt or mayonnaise
  • 5cm approx. chunk Parmesan – finely grated
  • 1/2 teaspoon garlic granules
  • Salt to taste
  • 1 teaspoon olive oil


  • Wash the kale and sauté in the olive oil and a sprinkle of water for a few minutes to cook it.
  • Leave it aside to cool down
  • Next chop the artichoke hearts and mix with the rest of the ingredients
  • Add the kale and mix well
  • Enjoy with some courgette crisps  – see previous recipe
