Courgette Crisps

  • 1 medium sized courgette
  • 1 teaspoon olive oil
  • Salt to taste


  • Slice the courgette very thinly if you can, its best to use a mandolin
  • Pat dry with Kitchen paper – this is really important – you want to try and remove as much water as possible
  • Lay slices on a baking sheet and brush with a tiny amount of olive oil
  • Season the oil with salt or a little minced garlic – only a small amount it’s very easy to over season  Bake in the oven at 110’C for about 1.5-2 hours – you don’t need to watch them you can just leave them to crisp up…
  • The crisps will be ready when they are just browning & come away from the paper crisp.
  • If they are still soft keep checking every 5 minutes and remove the crispy ones from the edge of the baking tray
