Chick Pea Blondies

A little bit like my brownies… and my greenies… but  a blonde version here!

Given a little Easter make over by my 7 year old who made these with a little help from mummy 🙂

Perfect for making with little ones over the holidays, these blondies are make with chick peas and cashew butter so packed with protein, fibre and healthy fats.

Serves - makes 16 portions
Prep. Time - 10 mins
Cooking Time - 15 mins
GF, DF, Vegan

Ingredients

  • 2 tins of chick peas – in water, no salt added
  • 200gms cashew butter
  • 100 – 125gms honey depending on how sweet you like it or maple syrup if vegan
  • 2 teaspoons cinnamon powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 100gms Mini chocolate eggs to decorate on top or 100gms dark chocolate

Method

  • First drain the chick peas in a colander and remove as much water as possible
  • Next place all the ingredients except the chocolate into a food processor and process to a smooth paste
  • Break the chocolate into small chunks and fold into the mix
  • Pour into a greased 20 x 20cm mould flatten
  • Bake at 180’C for about 15 – 20 minutes until the top is just starting to split
  • Leave to cool before turning out and cutting into squares
