Avocado, tomato & Red onion salad

  • 2 large ripe avocados
  • 1 red onion
  • 250gms cherry tomatoes


  • 2 tablespoons extra Virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 Large clove garlic – finely minced
  • 1/2 teaspoon red chilli flakes  (optional)
  • Salt & pepper to taste


  • Peel and chop the avocado in roughly 1cm chunks
  • Peel and chop the onion into similar sized chunks
  • Wash and half the cherry tomatoes
  • Mix all the above together
  • Make the dressing by mincing the garlic and adding it to the olive oil, vinegar and chilli flakes
  • Mix the dressing with the avocado mix and refrigerate until ready to serve
