I have been a General Practitioner in London for over 12 years.  I work with families and children and see a need for family friendly food that is easy to make and enjoyable to eat by the whole family. I often meet parents who struggle to encourage their children to eat nutritious meals or to find the time to make healthy meals at home. They often find themselves cooking separate meals for their children or using readymade meals. I want to empower these families to cook together and make quick, easy, cheap and healthy recipes at home the whole family can enjoy.

I’ve tried to write this post ever since I read about the murder of George Floyd but I’ve found it hard to put my thoughts onto paper, to express my feelings sensitively and in a way that would encourage others to stop, read and speak up themselves.

I’ve shared the quote above from my good friend Dr Geeta Ludra and would urge you to go and read her post @_dadimas as she puts things so much more eloquently than I ever will.  She has spent many years educating and speaking about exactly this.

However muddled my thoughts are, I can’t remain silent about this.  We all have a voice and we need to make it heard.  I will spend this week reflecting, educating myself and my children and sharing posts to support change through my stories...

Presenting the easiest ever snack ball recipe, perfect for adults and children!
I was chatting to my lovely friend and fellow GP Stephanie @the_gp_mum (check out her page for fantastic medical advice about all things general practice) about how she finds it hard to find allergy friendly recipes for her daughter who suffers with allergies.  It got me thinking how I could help come up with more allergy friendly recipes .

Most snack balls are made with nuts or seeds and are not suitable for those with allergies or for  every day school lunch boxes... so here is my solution... still a nutrient dense ball of deliciousness but made allergy friendly 🙌🏽

Quinoa coconut balls 😋
This is a super quick and easy recipe, perfect for getting children involved in the kitchen too.  Made with only 4/5 ingredients...you can keep them in the fridge for up to 1 week in an airtight container (if they last that long!)

Recipe: (makes 10 balls )

1 cup cooked quinoa (1/3 cup dried)
4 tablespoons desiccated coconut (more for rolling in after )
2 heaped tablespoons cacao powder
2 -3 tablespoons honey/agave/maple syrup 
2 tablespoons chia seeds (this is optional, but it will make your balls firmer but they are great without)

1️⃣ First cook your quinoa - (about 1/3 a cup dried quinoa cooked in 2/3 cup boiling water). Drain this well once cooked 
2️⃣ Mix all the ingredients in a bowl together 
They should start to come together easily or add a little more honey/maple syrup 
3️⃣ Make small balls with your hands, press the quinoa together well 
4️⃣ Roll the balls in more desiccated coconut & place in an airtight container. 
5️⃣ Pop them in the fridge for a few hours to firm up or overnight if you can.
6️⃣ Enjoy!

New fav pancake recipe in our house! 🤩 I took the drunken cherry Dutch baby pancake recipe from @bbcgoodfood and sobered it up for breakfast!

Introducing my blueberry lemon drizzle Dutch baby pancake! 
Can you believe the rise on this?
It literally touched the roof of the oven!!
Have you ever tried a Dutch baby pancake?  They are so quick and easy to make... basically a sweet Yorkshire pudding 😋 and who doesn’t love a Yorkie?!

Top tip 1: take out the top shelf of the oven so you have room to watch it grow!
Tip tip 2: make double of the mix because my children demolished this in seconds and we were literally left with crumbs! .
.
Recipe:
.
.
65gms plain flour
2 eggs
100mls milk
2 tablespoons light olive oil 
1 tsp vanilla extract
100gms blueberries 
4 tsp Icing sugar 
1 tsp lemon juice
Lemon rind to shavings to decorate .
.
1️⃣ preheat the oven to 200’C fan, pour the oil into your skillet and place it in the oven to heat up.
2️⃣ To make the mix, put the flour in a bowl
3️⃣ make a well in the middle
4️⃣ crack in the eggs and add the rest of the ingredients 
5️⃣ whisk together to make a batter 
6️⃣ Remove the hot skillet from the oven and pour in the batter it should sizzle in the hot oil 
7️⃣ Put the skillet back in the oven for 20 minutes to bake at 200’C
8️⃣ Mix the lemon juice and icing sugar together to make a paste
9️⃣ Heat the blueberries in a pan so they burst slightly releasing some juice 🔟 When the pancake is cooked, pour on the blueberries and drizzle the lemon drizzle
Serve right away! 😋 .

60gms Dried lentils (red, green, any and a tin works too)
1 sweet potato (or a tin of chick peas, beans, Sweetcorn etc)
1/2 a red onion 
Large handful coriander
Honey or 1/2 an apple
Avocado (optional - substitute with any other salad or veggies)
Few peanuts (or another nut)
1 red/green chilli (optional)
1 lemon/lime
4-6 tablespoons yogurt 
1/2 a beetroot (optional)
Chunk cucumber 
Mint - a few fresh leaves (or dried or jar)
Cumin seeds (optional)
Pomegranate

Here’s a Friday night #fakeaway idea for you! Another classic Indian streetfood favourite in our house, Keema Pav, except, I ran out of the ‘pav’ (buns) so this is Kheema sourdough 😋
Topped with sliced pickled onion, fresh coriander & a squeeze of lime 😋
.

Kheema is a spicy Indian curry made with mince meat but you can use any plant based mince too as an alternative.  I used turkey thigh mince and I always add an equal amount of peas .
.
I actually made this a couple of weeks ago so bear with me and I’ll try find the photos and videos and share in my stories & highlights 🤗
I also made double and popped half in the freezer so this is a quick and easy meal to defrost for tonight!

I grew up eating them... green with chilli and salt or ripe in fresh rus with puri 😍
I just happened to deliver some groceries to my auntie and she shared some of her mangos with me 😍😍😍

I haven’t made my miso aubergine for ages!
This time I popped it into the air fryer and it worked a treat! Super soft melt in your mouth centre with crispy skin 😍
It literally takes 5 mins to prep and if you don’t have an air fryer you can bake it in the oven too.
Served with nasi gorengc with edamame & spring onions adapted from my favourite foodie site @bbcgoodfood - let me know if you would like the recipe for this too 🤗

Confession - my children still didn’t eat the aubergine (they did try it 🙌🏽) but this aubergine recipe converted my hubbie so I’ll keep trying 🤞🏽
.

Recipe: (Serves 2)
.
.
1 large aubergine 
2 teaspoons sesame oil (or alternative)
2 teaspoons miso paste (the miso soup sachets work perfectly )
1 teaspoon honey/agave nectar or similar 
More oil for brushing
Optional add a little minced garlic and ginger to your paste too 😋
Sesame seeds & spring onions to garnish

🔹 Mix the sesame oil and miso paste & agave together to make a paste 🔹 Cut the aubergine in half & score the flesh as shown (this helps it bake and the flavour sweeps into the flesh)
🔹 brush the aubergine all over with sesame oil 🔹 Now take your miso/sesame paste and brush the scores half with the mix
🔹 Cook in the air fryer for 15mins @ 180’C
Or in the oven a little longer until soft and cooked through 🔹 You may need to vary the time depending on the thickness and size of your aubergine so keep an eye on it whilst It’s baking 🤗
🔹 Sprinkle with sesame seeds and spring onions to serve .

When life gives you lemons .... bake lemon drizzle cake! 
One of my boys’ favourite cakes is lemon drizzle and I haven’t baked one for ages so I went all out with candied lemon, lime & rose petals 🌹

With eggs in short supply at the moment I couldn’t wait to try this recipe from my friends over @vegetarianhotspots and it did not disappoint... moist, lemony delicious! 
I adapted it slightly to make it totally vegan - recipe below!

Recipe: (Adapted slightly from @vegetarianhotspots recipe)

60mls olive oil
130gms caster sugar
1 tsp vanilla extract 
Zest of 1 large lemon
310mls almond/oat milk
3 tablespoons lemon juice
Pinch salt 
190gms SR flour ( or use plain flour with 1 tsp baking soda and 1/2 tsp baking powder)
.

🔹 Put all the ingredients except the flour in a bowl & mix well 🔹 Slowly add the flour a few tablespoons at a time into the bowl and stir in
🔹 Keep adding, keep stirring until all incorporated
🔹 Grease a baking loaf tin and pour in mix
🔹 bake at 175’c for 40-45mins
🔹 When cake cooled down make the icing with 2 tablespoons lemon juice, 8 tablespoons icing sugar & zest of 1 lemon - drizzle over the cool cake.  Top with candied lemons & more lemon zest.
🔹 serve with chai 😍😋.

Quick & easy snack idea today, oaty chia cups filled with chocolatey peanut butter 
Perfect for kids to bake themselves too... minimal equipment and ingredients (No eggs 🙌🏽 - I know how precious these are at the moment!) required ... you just need a fork and a bowl .... if you don’t have a cupcake tray, you can use a tray to bake... or even a glass bowl that’s oven safe...

I saw this on my friend @dianemorrisey ‘s page and I couldn’t wait to try it.  I make egg muffins all the time but I love the idea of the tortilla wrap cups - genius! .

It’s a great way of using up whatever veggies you have in the fridge and to get veggies in at breakfast time... I know eggs are not always available at the moment so I’ve got you covered with an egg free version coming up soon 🤗

Indian street food at its best!  This is a delicious sweet and spicy tangy vegetable curry served on toasted buns.  The best thing about this dish is that it went straight out of my kitchen onto the @olio_ex app as part of their #cook4kids & #cook4carers campaign & onto the plate of a child who needed it.

I’ve been sad to see all over the news how many children are currently suffering food poverty all over the world as a result of lockdown and being unable to access the free school meals they would usually have... so I wanted to reach out to all of you lovely foodies with a way that YOU can help via @olio_ex

AKA... Kitchari... Khichdi... Khitchari 😉 .
Whatever you call it ... it’s delicious and the ultimate Indian comfort food 😍 probably the equivalent of a Sunday roast for Indians!
I’ve grown up eating this most weekends so it’s odd to see it featured as a ‘trendy’ food ... I’m seeing it everywhere these days but I’m posting it today to mark the start of #weaningweek. .

Traditionally, in the Indian culture, kitchari is a staple during weaning and often one of the first foods for a baby.  It’s also a great way to introduce spices to young children (maybe just add turmeric to start with and add more spices as they grow to enjoy the taste)  If you are interested in learning more about adding spices to your babies food - check out my website for an ebook full of advice and recipes for weaning written with the super knowledgable Lucy @childrensdietitian .

It’s quick and easy to make with rice, lentils and vegetables it’s complete meal in itself. You can add in any vegetables to adapt it to your family’s tastes.  My boys love it! 
We like it best with a potato and pea curry, a large dollop of ghee or butter & a onion salad on the side 😋

Recipe: (serves 4)

150gms split moong daal
150gms basmati rice @tildarice 
150gms vegetables of choice 
Large knob butter or ghee & more to serve
5-6 cups of water
5 curry leaves
1/2 tsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric 
1 small stick cinnamon 
coriander to serve
Salt to taste
You could also add a little ginger too
Melt the ghee or butter in a heavy pan (use oil if vegan) on a low heat, add all the spices and stir for about 30 seconds be careful not to burn them
Next add the daal, rice & 5 cups of boiling water
Cover and simmer for 20 minutes 
Stir in the chopped vegetables and add 1/2 -1 cup more hot water
Cover and simmer for a further 10 minutes.
Serve with a large knob of butter or ghee 😋

This was dinner last night and the kids loved the naan so much they’ve asked for it again tonight 🙌🏽
I’ve been experimenting with my sourdough starter and this was the result! 
Britain’s favourite chicken tikka masala (🌱swap for paneer or veg) & garlic sourdough naan 😋

If you don’t have a sourdough starter don’t worry - you can make one easily (and have naan in 5 days time It’s a slow process!) or just substitute the starter for yogurt for delicious naan

Recipe: (Makes 8 naans)
.
.
200gms sourdough starter (see my stories for how to make this but if you don’t have any use extra yogurt instead)
300gms self raising Flour 
100gms live yogurt 
1 teaspoon Nigella seeds
2 cloves garlic, coriander and a large knob of butter for brushing on top of your naan
Combine all the ingredients together to make a dough.
Set the mix aside in a bowl, cover with a damp cloth and leave it for 2-3 hours.
Now divide the mix into 8 equal balls (top tip - rub a little oil onto your hands and the rolling pin to stop the dough sticking to them) 
Roll each ball into a naan shape
Dry toast on a frying pan on a medium heat for a few mins on each side until you start to see the bubbles turn brown 🙌🏽
Mince your garlic, roughly chop the coriander, melt the butter and mix it all together 
Brush the hot naan with the garlic butter & serve right away.

350gms (ish) peanut butter - depends on how thick you want your layer of peanut butter
185gms unsalted butter
185gms dark chocolate @lindtuk 
85gms plain flour
40gs cacao powder 
100gms white chocolate
3 large eggs
275gms golden caster sugar

1️⃣ First line your baking tin with Some baking paper and load on a thin layer of peanut butter (about 250gms if it to make a thin layer) - I used my favourite @pipandnut smooth peanut butter...freeze this layer until solid & save for later
2️⃣ Now for the brownie mix - break the dark chocolate into small chunks and melt with the butter in a microwave, 1 min at a time into its fully melted. Leave to cool
3️⃣ Preheat oven for 160’c fan & grease/line a 20cm square baking tin
4️⃣ whisk the eggs & sugar with an electric whisk until the mixture doubles in volume and is thick & creamy
5️⃣ Pour the cooled chocolate/butter mix into the egg/sugar mix and gently fold to mix 
6️⃣ Sieve the flour and cacao powder and gently fold this into the mix too
7️⃣ Roughly chop the white chocolate and add to the mix
8️⃣ Be careful to fold in the ingredients gently so as to not knock out all the air 
9️⃣ Pour half the mix into baking tin & then add your frozen layer of peanut butter & finally the other half of the brownie mix
🔟 Bake in oven for about 25 mins - check and add a few mins if needed.  It should have a shiny papery crust & the sides just beginning to come away

Instagram post 2294336429122618112_5390931089 Yesterday was a sad day at work.... one of my patients sadly passed away... we made her final week as comfortable as possible & with the help of her absolutely amazing carer she was comfortable in her own home & surrounded by love.  She was elderly & this was an expected death but that doesn’t make it any easier

I absolutely love my job and how we build relationships with patients over many years.  I’m definitely one of those doctors thats always running a bit late because I like to chat to my patients 🤗
This lady was one of my first home visits after I qualified as a GP over 12 years ago.... and I still remember it.... ‘are you old enough to be a doctor dear? Can you send the other doctor’ were her first words to me 🤣. Since then we had a fun relationship where she would tease me and generally boss me around as much as she could, but all in jest of course.

But to see her this past week.... bed bound unwell and barely able to utter a word really upset me.  It made me realise just how precious life is and how quickly it can be taken away from you.
.
.
I wanted highlight her beautiful carer.  Let’s call her Charlotte.  Charlotte isn’t on Instagram so you won’t see pictures of her wearing her PPE and caring EVERY DAY for our patient.
But Charlotte & other carers like her are the back bone of our NHS and support our patients selflessly.  They are a lifeline for so many of our housebound patients.

When my patient was unwell this week, Charlotte used her mobile phone to help me conduct video consultations.
Charlotte took her observations for me & reported back her temperature, BP & Pulse.
Charlotte took a urine sample, dip sticked it and told me the result. Charlotte washed her, dressed her, and showered her with love. So yesterday when we clapped for our carers I clapped hardest for Charlotte. One of our true Angels in the NHS who truly doesn’t get the credit she deserves. 
The real hero 💙
I hope we can all be a bit more like Charlotte & I hope after this pandemic, our carers will get the recognition they deserve 🙏🏽 #clapforourcarers .

What an absolute game changer adding Harissa to your sausage rolls 🙌🏽 (add pesto for younger kids if too spicy) 
So delicious!  I served them for lunch at the weekend with a side salad 🥗 and coleslaw.
I made mine with turkey mince, chorizo, sage & onion but you can use any mince including plantbased mince.

My hubbie and kids tried a lamb harissa roll @spicedeli a couple of months ago and I’ve been craving a non lamb version ever since so I could eat it... and I’m so glad I did!

Happy Easter weekend everyone 
I gave my banana bread a easter make over with some mini Easter eggs 🥚 🐣 much to my childrens’ delight! 
It’s the most easy bake ever and I promise it will be soft and delicious every time - no baking experience needed.
Lots of versions of this bake on my page... today’s is cinnamon with chocolate eggs. 🌱 No eggs/Vegan 🥚 don’t worry - just substitute with chia eggs & I stick in an extra banana too to keep it moist (I tablespoon chia seeds + 3 tablespoons water)

Recipe:

3 Ripe bananas - mashed 🍌 🍌🍌
200gms oats - ground or whole rolled oats
100gms butter/plant based butter
3 eggs 🥚 🥚🥚 ( 🌱 3 chia eggs + an extra banana)
1 & 1/2 teaspoons baking powder
1 teaspoon cinnamon 
1 extra banana &/or tablespoon oats for decoration)
100gms easter egg chocolate 
Add Nuts 🥜 & seeds of choice, berries or dark chocolate 🍫 for a variation 👌🏽

First whisk up the butter/coconut oil 
Add one egg, 1/3 of the banana mix & 1/3 of the ground oats. Mix well.
Repeat with the second egg, 1/3 banana mix,& 1/3 oats and finally the third egg, test of banana mix, oats.
add the cinnamon & baking powder, mix well
Finally stir in the chocolate & pour into baking tray
Sprinkle with oats to decorate and a sliced 🍌
Bake in a preheated oven @170’ for about 45 minutes or until a knife comes out clean 👌🏽
If you like it a little sweeter you could add an optional 50gms of caster sugar or coconut sugar but it’s sweet enough without for me 😋 .

Saturday morning tradition in our house is to make pancakes for breakfast... and here’s the best bit.... they are made by my boys 👦🏻👦🏻
I highly recommend cooking lessons as part of your home schooling curriculum... This is a super easy recipe for children to learn and independently make themselves.... I just help with the frying but older children might  be able to do this themselves too...
Before you know it they will be making breakfast for you in the mornings 😉 .

RECIPE:

2 bananas 
2 eggs
1/2 cup oats
1/2 teaspoon cinnamon (optional)

🔹 Mash the bananas really well 🔹 Mash in the eggs
🔹 Add the dry ingredients & mix well
🔹 Pan fry 1 tablespoon of mix at a time in little oil on a low-medium heat 🔹 Flip once you see bubbles and fry on the other side for 2 mind 🔹 Careful not to burn them 🔹 Enjoy with berries, honey, chocolate, nuts & seed sprinkles 🔹 if you prefer smooth pancakes, throw it all into a blender and blend to smooth - but it’s definitely more fun to mash 😉 .

I had great intentions of sharing a video for a store cupboard curry that I had recorded at the weekend but alas I’m finding myself in surgery every spare moment these days so unfortunately I’ve had no time to edit it 🤷🏻‍♀️
So I’m sharing this old image of chickpea curry to remind you that you literally can make a curry with your store cupboard staples with only:
5️⃣ Simple ingredients &
5️⃣ Simple steps .

🔹2 Tins of anything - chickpeas, kidney beans, lentils, sweetcorn, butter beans etc
🔹 1 onion 🧅 🔹 Tomatoes - tinned, fresh, purée 🍅 🔹 Garlic 🧄 & it ginger if you have it
🔹 Curry powder .
.
That’s it! And if you don’t have the curry powder use herbs 🌿 or spices and make a stew instead.

If you do have a host of Indian 🇮🇳 spices in you kitchen and a few more ingredients scroll down my page for a more detailed recipe underneath this same image - happy cooking! ❤️

Recipe:

1️⃣ Finely chop and add the onion in a little oil on a medium heat until it’s soft and brown, burning on the edges is ok.... this will all melt into your sauce and add a delicious smokey flavour 
2️⃣ Mince/finely grate & add the garlic & ginger to the onion and stir for a minute 
3️⃣ Add your tin of chick peas & tomatoes
(If using purée or fresh 🍅 add 1/2 a pint of water too)
4️⃣ Add 2 teaspoons curry power & salt to taste
5️⃣ Simmer for about 20 minutes on a low heat with the lid on.  Stir every 5 minutes and add a little water to adjust the consistency as required 😋 Serve with rice, quinoa, bread, flat breads, Pitta - anything goes 🙌🏽

I keep hearing messages about how GP surgeries are ‘closed’
We are most definitely OPEN.  We are working harder than ever to support our patients.  In fact most of us are putting in extra hours to support colleagues who are unable to work.  Furthermore  big changes are coming to support our patients even more... watch this space.

However, we do need to work in a different way right now to protect us all - This means everything will be triaged by telephone first. 
Please don’t think we are shirking our responsibilities if we can’t deal with your routine/non urgent problems right now. 
I thought it would be helpful to share some tips on getting the most from your GP at this time.  Fellow HCP pls add your thoughts 🙏🏽

We know you are anxious and we will try our hardest to alleviate some of that anxiety
.
.
🔹 If you have baby immunisations booked please do come for them 🔹 If you have an emergency we will of course see you as is appropriate but we may triage you on the phone first.
🔹 We won’t be checking routine blood tests at this moment.
🔹 If you have online access please do use it for repeat prescription requests etc.
🔹 We can do some examinations on the phone so we may ask you questions such as counting to 30 fast or ask you to check your BP or temperature so if you have a BP machine or thermometer at home, pls keep it handy for your call 🔹 Please don’t stockpile medications or request prescriptions you don’t need ‘just in case’. This limits supply for others.
🔹 Try www.nhs.uk first if you have access to the internet.  Many of your questions will be answered there.
🔹 If you can call your GP rather than 111 to take the strain of them please do. If you are acutely unwell with symptoms of covid19 - please do call 111.
🔹 Try to avoid calling for sick certificates.  The government advice should be enough. 
You can get a cert for self isolation online 🔹 If you request a telephone consultation please be near your phone or keep it on.
🔹If you need to speak to someone for advice we are here.  There are also lots of charities that are here to help too and I’ve saved the numbers in my highlights 🔹 Cont in comments

I knocked these up with my 7 year old today in about 10 minutes with 4 store cupboard staples.  The plan was to share how to make these on a Instagram live at 3pm on Friday but I’ve signed up to work extra hours for team NHS from tomorrow... so here’s the recipe incase we can’t go ahead... 🤞🏽

RECIPE: (makes approx 15)

2 cups oats 
5 heaped tablespoons peanut butter (or any nut butter you have or tahini)
3 tablespoons honey 🍯 (or agave nectar or fruit syrup or any sweet liquid really or use a ripe banana 🍌 )
1 and 1/2 tablespoons cacao powder (if you don’t have any - don’t worry add a teaspoon of cinnamon for flavour or just leave them out 😋)
P.S. if you have a nut allergy but are ok with seeds - sunflower seed butter works really well too just add a bit extra honey because it can be a bit bitter)

Added extras - chopped nuts, seeds, dried fruit.... anything goes 😋

Mix all the ingredients together in a  bowl and form approx golf ball sized balls .

Recipe 1: dumplings 🥟

The best thing about this recipe is that you literally only need plain flour, water & a little salt to make the wrappers. Fill with whatever is in your fridge.  The dumplings pictured are filled with red cabbage 🥬 & mushroom 🍄 because that’s what we had in fridge 🤗
.
.
They are so easy to make and once you get a production line going (we had one on rolling, 2 on filling 😉) you can make lots very quickly 
I’ll add some story highlights on folding the wrappers too 🥟
.

Recipe: (makes about 30)
.
.
250gms plain flour (a bit more for dusting)
125gms water 
50gms chopped fresh (works better) or frozen spinach (optional or use 25mls extra water)
1/4 teaspoon salt
.
.
🔹Defrost spinach in the microwave, mix with the water, bring to the boil for a few minutes so the spinach is fully cooked & blend to a puree 🔹Add 150mls of the boiling water mix to the flour and salt & mix well. 🔹Get your hands in once it’s cooled down a bit & form a dough. 🔹Kneed well (one for the kids 😉). 🔹Set aside for 1 hour or freeze for later use 👌🏽
🔹After an hour make about 30 small balls from the dough 🔹Roll each ball flat to a a circle about 7cm diameter 🔹fill with choice of filling and pinch pleat press to seal! (See stories 🤗)
🔹Once filled steam to cook or pan fry & steam like gyoza 😋

Filling suggestions: 
Spinach, any veggies, frozen veggies eg sweetcorn, peas, edamame, broccoli prawns, chicken anything you have in the cupboard! .

As school closures kick in today, children start a new stage of online & home schooling with their parents.  I wanted to share now even more just how important it is that we share positivity around the changes & how we share information with our children.

1️⃣ Talk about it, don’t avoid the subject & be honest, their interpretation is often a lot worse than the truth
2️⃣Be mindful of how you show your reactions - try to minimise anxiety & fear by setting aside a time when you are calm & ready
3️⃣Be prepared for questions and answer then honestly
4️⃣ Listen & ask them about their concerns & worries.  It’s important to acknowledge we all have concerns
5️⃣ Explain appropriate to age - see note below
6️⃣ Stick to facts & truth but filter how much you share depending on age
7️⃣ Older children may have access to SM/News explain how the media sometimes sounds worse than it really is.  Use credible age appropriate sources for information for them & you @nhswebsite @who
8️⃣ Teach them what they can do to help:
Importance of hand hygiene, not touching their faces, not sharing drinks, bottles, towels, glasses, cutlery, toothbrushes etc
9️⃣ Social distancing can be difficult.  But physical distance is not a barrier to social interaction. Have a virtual cup of tea with grandparents over FaceTime. Write letters or emails.  Use this time to reconnect as a family ❤️
🔟 As parents we play such an important role in educating our children - Let’s ensure we do it in a way that builds resilience not fear and panic 🙏🏽

I  volunteer in their canteens and it’s wonderful to see people from all walks of life coming together to enjoy a healthy meal together. 
For some that I have spoken to, this is their only social contact for the week ❤️

As social distancing measures come in... they will need to adapt their working patterns and plan to continue their work by delivering their meals to those in need.  They are looking for donations and volunteers to put this in place... if you have some spare time or can afford to donate please do 🙏🏽

🔹 3 ripe bananas 🍌 (plus one extra for decorating) if not ripe you might want to add a little sugar to sweeten your cake🔹 100gms butter 🧈 (or alternative)
🔹100gms dark chocolate 🍫 @lindtuk 🔹 150gms oats (grind to a flour for a more cakey texture) @quakeroatsuk or you can use plain flour too as an alternative 🔹 50gma cacao powder 🔹 1.5 teaspoons baking powder
🔹 3 large eggs 🥚 @thehappyeggco .

Mash the bananas 
Chop the chocolate into chunks 
Grind the oats into a flour if you can or leave them whole for a bit of texture 
Butter - melt in the microwave or if soft already & at room temperature just mash it in with the banana
Now add all the ingredients together into a bowl and mix really well
Pout mix into a pre-lined baking tin or loaf tin
Bake for 45mins @170’C
That’s it!

We LOVE dumplings in our house... 😋
So making dumplings from scratch was the perfect rainy day activity yesterday and I’m surprised how easy it was!
Now I usually buy my gyoza or dumpling wrappers from the Asian supermarket ... they are handy to keep in the freezer and we love stuffing them with different fillings...
My boys have become pretty good at folding now 👌🏽

So when I saw @dish_by_rish had posted a super simple recipe for making the wrappers at home I couldn’t wait to try them 🙌🏽 Check out his page for the wrapper recipe and many other delicious recipes!

Honestly, it did take a lot longer making the wrappers from scratch but they were super easy and tasted spot on 🙌🏽

Recipe:

30 gyoza wrappers (ready made or make your own)
150gms prawns (or shiitake mushrooms 🍄 finely chopped)
4 spring onions - finely chopped 
1 teaspoon fresh grated ginger 
2-3 cloves garlic - minced
Soy sauce to taste 
2 large handfuls of baby spinach - finely chopped 
1 teaspoon sesame oil .
Fry the spring onions in the oil, add garlic, ginger & prawns.  Season with soy sauce  pans fry for a few minutes.  Next stir in the spinach to wilt it very slightly.
Fill into the dumpling wrappers & fold away
Steam/pan fry as desired...😋

500gms chicken breast or paneer - chopped 
1 large red onion - finely chopped 
250gms baby spinach leaves

4-5 cloves garlic - minced
4cm ish chunk ginger - minced 
1 heaped tsp  cumin seeds 
1-2 tsp turmeric
1-2 tsp ground coriander powder
1- 2 tsp garam masala 
140gm tin tomato purée 
1 large handful coriander - finely chopped 
100mls double cream or coconut milk 
Fry the red onion in the oil.  Add the cinnamon stick, black cardamoms & cumin seeds.  When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2🌶 if you like it spicy. 
Stir for a couple of minutes. 
Add your choice of protein & brown
Finally, add a 140gm tin of tomato purée, 1 pint of water, the spices &  a handful of chopped coriander. 
Simmer for about 20 - 30 minutes until cooked.  Add a little water if the sauce seems too dry.
Stir in the washed baby spinach leaves and cook for a couple of minutes to wilt them
Just before serving stir in about 100mls of double cream or coconut cream if dairy free 
To turn it into a pie, just cool the curry down and keep it in the fridge.
When ready, pour into an oven proof dish and cover with a layer of puff pastry - (I used 200gms ready made @jus_rol rolled out thinly to cover my dish
Brush with some egg wash
Sprinkle with Nigella seeds 
Bake in the oven @200’C for 20 mins 
Serve right away! 😋

Potions lessons in DCK today for my little Harry Potter fans with their back to school magic smoothie today ..

Even my avocado hating 10 year old enjoyed this 🙌🏽 It’s amazing how anything Harry Potter themed goes down without a problem in my house even if it contains avocado 🥑🤷🏻‍♀️

Homemade granola bars to keep us fuelled for a day on the slopes ⛷ 
If you are looking for a quick & easy healthy grab & go snack option/mid morning pick me up or something to take on a half term day trip?
Then look no further 😋
Store in the fridge or in an air tight container for a few weeks if you want to make a large batch but I have a feeling these won’t last that long 😉 .

For a NUT FREE option - substitute the nut butter for half coconut oil/maple butter or use a seed butter if possible. 
Substitute the nuts for dried fruits or seeds as appropriate #l

👩🏻‍🔬 Recipe: (makes approx 12-16 bars)

180gms medjool dates 
100gms pumpkin seeds 
100gms sunflower seeds 
150gms whole almonds
8 heaped tablespoons cashew or peanut butter @meridianfoods 
75gms rolled oats @quakeroatsuk 
1 teaspoon ground cinnamon @rajahspices (1-2 tablespoons Maple syrup or Honey to sweeten - optional - I don’t think it needs it)
20 x 20cm silicone mould or use any size and adapt the thickness/size of your bars .

In a food processor - blend the dates and peanut butter to get a smooth paste. 
Next stir in the rest of the ingredients.  They should all clump together into a big sticky ball. If it’s not holding together add a little more but butter.
Next press the mix in to your mould
Leave to set in fridge for 30 minutes
Cut into bars & enjoy 😋
If you fancy adding another step try toasting all the nuts, seeds & oats in the oven @180’ for 10 minutes first - this gives the bars a delicious toasted flavour 👌🏽👌🏽👌🏽

Think creamy coconutty broth with delicious sweet juicy sweetcorn kernals and a hint of chilli 🌶.... yum!
Here’s a throwback to a Saturday night in #fakeaway recipe ... This one is a real crowd pleaser, and if you hold back on the chilli it’s perfect for introducing young children to curry & spice. (Incase you fancy trying it over the half term break ...🤗)
Enjoy with naan, chapati, rice or on its own!

Recipe: (Serves 4)
.
.
1 large red onion 
1 tablespoon olive oil
1 teaspoons mustard seeds
2 teaspoons cumin seeds
5 black cardamoms @eastendfoods
2 teaspoons minced ginger (about 4cm chunk grated or minced)
4 cloves garlic finely chopped
2 teaspoons turmeric @rajahspices
1-2 chillis (optional) 🌶 
I tin finely chopped tomatoes or 140gm tin purée
4 corn on the cob halved🌽 
Or 500gms frozen sweetcorn @birdseyeuk or a mix of both 
1 tin coconut cream 🥥 @bionaorganic 
250gm bag baby spinach leaves 
Large handful fresh coriander leaves - chopped 
salt to taste .
First fry the onion, mustard seeds & cardamoms in oil until almost translucent & the mustard seeds start to pop
Next add the cumin, garlic, ginger & chilli. Stir for a minute on low heat being careful not to brown the garlic.
Next add all the rest of the ingredients except the coconut cream, cover with a lid and leave to simmer for about 10-12 minutes until the sweetcorn is fully cooked.  Take the lid of and cook away any excess water until you get a thick gravy. Add the spinach leaves and cook for a minute or 2 to wilt the leaves.
Finally stir in the coconut cream, sprinkle on some more coriander & simmer for a few minutes.  Serve with hot naan, rice or chapattis
