COVID 19 VACCINES 🦠💉 Today I was a vaccinator for one of the NHS vaccination centres in London & I also received my Covid-19 vaccine so I wanted to share some images (swipe 👉🏽) & insights from the vaccination clinics. EVERY patient I saw commented on how smoothly everything flowed. ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ I’m going to be sharing more insights into the vaccination clinics over on the @nhsenglandldn page over the next few weeks so head on over there. SWEETCORN EGG DROP SOUP Another quick and easy lunch idea today for soup season! ALMOND BERRY BANANA CAKE 🎂 Because banana bread is soooo last lockdown 💁🏻♀️ So Fridays used to be my day off from work to have some ‘me time’ (aka squeeze in a workout, do housework & catch up on life admin 😂). However, today, it was mummy’s home economics lesson & this is the result! A delicious almond & oat flour banana & berry bake 😍. Serving suggestion: warm with vanilla custard or ice cream! Recipe video by my 8 year old in stories 🥰 The lesson we learnt today: If you put butter in the microwave to melt, you may be so distracted by your 8 year olds questions that you actually forget to take it out to put into the bake itself 🤦🏻♀️ But don’t worry it still worked & tasted delicious so you can find this butter free recipe in my stories & I’ll save it to highlights 🥰 Who fancies giving this a try over the weekend? 🍜 MISO NOODLE POTS 🍜 . If like me, you are finding yourself making 123586483 meals a day... here is a quick & easy lunch idea the whole family will love. Demonstrated by mini me 👦🏻🥰 It’s the easiest recipe to prep the night before & you can throw in lots of fresh veggies...or anything you have left over from your evening meal... we used rice noodles, spinach, edamame, mushrooms, spring onions, coriander chilli & tofu. But you could also add cooked prawns, chicken or any other vegetables. In fact, I made peanut butter chicken version (you can find it further down my page) and it was so good! All you need to do is pour in boiling water when you’re ready to eat 😋 Your very own pot noodle 🍜 Recipe in the video - I recommend sound on 🎤🥰 Chintal x Edit: lots of questions in DMs about which miso I used - I used @clearspringuk barley miso - they have sachets which are handy for on the go or you can buy unpasteurised in a jar. If making this ahead of time - put all the WET INGREDIENTS AT THE BOTTOM & dry noodles on top so it can be kept ready. CHRISTMAS CRINKLE COOKIES 🍪 Leftover mincemeat or fruit? I’ve got you covered with a delicious way to use it up because I’m all about #zerowaste (and if, like me, you don’t like mincemeat - use candied Orange or lemon peel 🍊🍋) This @bbcgoodfood crinkle cookie recipe is always on repeat in our house - so quick & easy my boys can make it themselves. 🎄 BRUSSEL SPROUT PAKORA 🎄 Brussel sprout pakora cooked live this morning with my lovely friend @drsarakayat for herself and her 6 month baby boy Harris. A family friendly recipe suitable for weaning (from 6M +) and a great way of introducing spices into children’s food... I’m hoping Harris will love them Sara! ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ So if you’ve got any leftover over sprouts after Christmas dinner... turn them into Pakora in less than 15 minutes with this super easy recipe 🙌🏽 Even my kids enjoyed these & they turn their noses up at sprouts! Let me know if you fancy giving these a try! Chintal x Recipe: (approx 20 pakora ) 250gms Brussel sprouts 1 red onion 200gms Gram flour (chickpea flour) 200-250mls water 1-2 teaspoons turmeric 1 -2 teaspoon cumin powder 1 teaspoon minced garlic/ginger Hand full of chopped coriander Salt to taste (not for babies!) 500mls oil for deep frying or spray pakora with a little oil and use an air fryer 1️⃣ Wash and slice the sprouts into thin slices (for babies - steam/part boil them first but not too much or they will end up mush!) 2️⃣ Add all the ingredients except the water into a bowl 3️⃣ Add 1/2 the water & Mix really well 4️⃣ Add the rest of the water slowly about 10 mls at a time until you have a thick batter coating the sprouts 5️⃣ Adjust the water as needed, if the sprouts are quite wet you may not need it all. 6️⃣ If the batter is too loose and not holding together add in a tablespoon or 2 of the gram flour 7️⃣ Heat the oil on a medium heat 8️⃣ Drop heaped tablespoon sized pakoras into the hot oil and deep fry for a few minutes until they just start to turn a golden brown 9️⃣ Remove and drain on kitchen paper & serve hot! 😋 🔟 Sprinkle with a little chat masala if you have it and serve hot with - tamarind or coriander chutney (recipe further down my page) @nanaschutneys also have some delicious chutneys that would work well with these ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ __________________________ #drchintalskitchen #pakora #sprouts #bhajia #bhaji #onionbhaji #glutenfreefood #glutenfreerecipe #indianfood #indianrecipe #easyindianrecipes #yum #healthyrecipes #easyrecipes #yum #quickandeasy

To make the tree - peel layers of cucumber, fold to make the ‘tree’ and poke with a cocktail stick to keep everything in place! 🥞🎅🏻 PANCAKES 🎅🏻🥞 Yay its DECEMBER! 🥞🎅🏻 Well this breakfast went down well in our house! Our usual banana/oat blender pancakes got a little Christmasy berry & cream makeover 😋 Right ... finally time to buy our🎄... I think I’m the only person in the world who doesn’t have it up yet! This year, I’m trying to be more sustainable so we’re going to buy an artificial tree we can reuse every year - Any recommendations? Thank you! Chintal x Recipe: 2 bananas 2 large eggs 3/4 cup oats 1/2 tsp baking powder (for fluffy 🥞) 1/2 tsp cinnamon (optional but advised!) Oil for frying Toppings: Strawberries, blueberries & cream to decorate. BUTTERNUT & SWEET POTATO COCONUT CURRY Literally the quickest easiest creamiest curry EVER & suitable for the whole family from 6months up I’ve served with rice, chapatti & a side salad (swipe 👉🏽 to see a baby 👶🏻 friendly serving suggestion) I had a bag of diced butternut squash & sweet potato from @ocadouk in my fridge to use up & seeing as I’m all about #ZeroWaste I turned it into this delicious curry! (We had soup for lunch otherwise that was option 2!) Happy Friday everyone! Chintal x ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Recipe: (Serves 2 or 4 as a side dish) 350gms squash/sweetpotato - cubed 1 teaspoon minced ginger 1/2 tsp mustard seeds 1 tsp cumin seeds 5 curry leaves (fresh if possible) 1 tsp turmeric 3 tablespoons tomato puree 160ml tin coconut cream 1 tablespoon rapeseed oil Handful of chopped fresh coriander (about 30gms) Salt to taste Method: 1️⃣ In a saucepan, heat the oil and add the mustard seeds until they start to pop. Then add the curry leaves, cumin seeds & ginger & stir on a low heat for 1 min 2️⃣ Next add the tomato puree & sqauash/sweet potato, coriander, turmeric & salt to taste. Stir well 3️⃣ Top with about 200mls water, enough to cover the squash/SP cubes. Put a lid on the pan and simmer for about 10-15mins until the squash is cooked through 4️⃣ Pour in the coconut cream (leave a little for garnish if you like) & stir well 5️⃣ Remove the lid and simmer for a few minutes until you have your desired consistency 6️⃣ Garnish with coconut cream and coriander. BLENDER SHEET PANCAKES Weekends = pancakes in our house 🥞 But if you don’t have time for all the flipping (there is a LOT of flipping involved in our house of 4! ) Then try my blend & bake sheet pancakes... you literally blend all the ingredients, pour into a baking tray & pop into the oven to bake... 💁🏻♀️ Literally the quickest easiest breakfast ever... plus happy kids with Pan - CAKES for breakfast 🙌🏾 Suitable for all ages 6m+, they are a great way to introduce and keep nuts in your babies diet Hope you can try it! I promise you will not regret it! Chintal x Recipe: 20cm square pan 2 large RIPE bananas (brown spots essential) 3/4 cup oats 3/4 cup ground almonds 3 eggs 1/2 tsp baking powder Toppings: raspberries, blueberries & flaked almonds (use ground nuts for <5 yrs). ⭐️ GINGERBREAD STARS ⭐️ We had lots of fun last weekend whipping up these gingerbread stars to share with family & friends for our Diwali festivities... fortunately, we made a double batch so I’ve kept these stars for us to hang on our Christmas tree 🎄⭐️ (Although I doubt they will still be hanging in a few days 😂😋) Is it too early to put up the tree?! 🎄 Who’s got theirs up already?! Credit for this beautiful recipe goes to the lovely Liberty @bakingtheliberty whose bakes are just AMAZING! Recipe from this months @bbcgoodfood magazine RECIPE: 100ms salted butter 3 tbsp golden syrup 100gms dark muscovado sugar 1/2 tsp bicarbonate of soda 1 tbsp ground ginger 1 tsp ground cinnamon 225gms plain flour 50gms icing sugar (for icing glaze)⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ 1️⃣ Heat the butter, sugar & syrup in a pan until melted and set aside to cool slightly 2️⃣ sift together all the other ingredients except the icing sugar into a bowl & pour in the butter mix 3️⃣ Use your hands to bring the mix together and form a dough 4️⃣ Roll the dough inbetween 2 sheets of baking paper until about 1/2cm thick. Chill in the fridge for 1 hour 5️⃣ Heat the oven to 170’c (fan). Remove the dough from the fridge and cut your star shapes using a cutter 6️⃣ Place the stars spread out on a lined baking tray and bake in the oven for 10-12minutes. EASY YUMMY SPAGHETTI ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ After 3 days of absolute feasting and LOTS of Indian food... I was craving something very different today... So I whipped up this easy peasy spinach and cherry tomato prawns spaghetti with creamy pesto. EASY DIWALI PENDA ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ If you need a last minute Diwali sweet recipe that you can whip up in under 15 minutes - I’ve got you covered! Just a few ingredients needed and minimal time - microwave penda to the rescue! Penda are Indian sweets made to share at times of celebration... whilst the celebrations are different this year... we will still celebrate and I just whipped up a batch of these to deliver via door step drops tomorrow Happy Diwali! 🪔🙏🏽❤️ Chintal x RECIPE: 1 tin sweetened condensed milk - 397gms 2 heaped tablespoons ghee/unsalted butter 2 cups milk powder 2 tablespoons milk Pinch saffron (optional) Pinch ground cardamom (optional) Pistachios & rose petals to decorate 1️⃣ Melt the ghee, heat the milk in the microwave & to a bowl with the saffron & cardamom 2️⃣ Stir in the milk powder & condensed milk. Mix well until you have a smooth paste 3️⃣ Microwave mix for 1 minute 4️⃣ Stir REALLY WELL. You want no lumps.. 5️⃣ Repeat steps 3 & 4 twice. STICKY SESAME TOFU & VEGGIE RICE ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Tonights recipe courtesy of my sous chefs 👦🏻👦🏻 Its my boys’ favourite sticky honey sesame tofu (can also be made with chicken as an alternative) Served with veggie rice (tonight sugar snap peas because thats what we had to use up but can be any veggies of choice) Topped with homegrown spring onions - grown from scraps (see stories for how) #zerowaste #ratemyplateocado @ocadouk @mobkitchen . This is one of our go to quick and easy meals mid week meals - it can be whipped up in under 15 minutes and is a great way to use up any veggies. It is so easy my boys (aged 10 & 8) can make it! Suitable from 12m + but remove the baby portion before adding the honey and soy sauce then suitable for 6M+ . . Recipe: . 250gms rice 200gms sugar snap peas (or broccoli or sweetcorn, peas, babycorn or any veggies of choice) 450gms firm tofu Soy sauce to taste 1-2 tblspns honey 4 heaped tablespoons sesame seeds (+ more to serve) 2 tablespoons sesame oil 2 tablspoons cornflour 2 spring onions . 1️⃣ Boil rice as per instructions 2️⃣ whilst the rice cook, cut the tofu into cubes and toss in the cornflour 3️⃣ Heat 1 tblspn oil in a frying pan, add the tofu and cook a few minutes until crispy, add the soy sauce, honey and sesame seeds and mix well until all the tofu is coated. Its ready! 4️⃣ In another frying pan, pan fry the veggies in a little sesame oil for a couple of minutes. Add the cooked rice, a little soy sauce to taste and stir. SHRIKAND CHEESECAKE ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ Shrikand is one of my favourite Indian desserts and cheesecake is one of hubbies favourites so I’m delighted to have collaborated with my friend Rishi @dish_by_rish to bring you our fusion Shrikand Cheesecake - perfect for Diwali celebrations! Do check out Rishi’s page for some absolutely amazing vegetarian recipe inspo... he is super talented and makes delicious recipes with easy steps & beautiful photos. His dumplings are on repeat in our house! Delicious saffron and cardamom infused yogurt and cream cheese baked with a cinnamon spiced nutty @lotusbiscoffuk base topped with almonds, pistachios, pomegranate & mini rose buds 🌹 Hope you can try this one - pls do tag us if you do! Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀⠀ Ingredients: 15cm cheesecake Base: -105g lotus biscoff biscuits -30g toasted cashew -30g toasted almonds -50g ghee/melted butter -1tsp ground cinnamon Shrikhand cheese mix: -360g cream cheese -360g strained greek yogurt -2tbsp boiled milk (20s in microwave) -Pinch of saffron -1tsp ground cardamom -80g icing sugar -2tbsp corn flour Topping: -100g strained greek yogurt -1tbsp boiled milk -pinch of ground cardamom -Pinch of saffron -Sliced pistachios, almonds, pomegranates + rose petals Method: 1️⃣ Preheat oven to 160’C (fan) 2️⃣ For the base, toast your nuts on a pan on low heat for around 5 mins 3️⃣ Blitz your biscuits and nut mix until fine crumbs, add in your ghee/butter and cinnamon 4️⃣ Place into an even layer in your tin and press down to flatten - freeze for 30 mins 5️⃣ For your filling, combine the saffron and the hot milk and allow to infuse 6️⃣ Whisk all the ingredients together until combined, place on top of your frozen biscuit base 7️⃣ Bake for around 35-40 mins. The centre should still be wobbly and the outer rim should have just gone golden brown. Turn off oven and leave door shut for 1hr. Remove from oven and then cool completely 8️⃣ For your glaze, infuse the remaining saffron in hot milk 9️⃣ Mix all ingredients together (except nuts and rose) and spoon onto your cooled cheesecake 🔟 Garnish with the sliced nuts and petals. Refrigerate for a minimum of 2 hrs before serving

LENTIL BOLOGNESE & STORE CUPBOARD RECIPES UNDER 50p ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ As we enter a 1 month lockdown again in England, I thought it would be helpful to share a charity ebook I wrote last year for an amazing charity @be.enriched featuring this recipe - lentil bolognese as well as many other balanced, quick & easy recipes all for under 50p per portion. ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ ⠀ I’ve written the recipes so that most of the ingredients are store cupboard staples or items you can pick up at a locally so if you’re self-isolating or can’t get to the shops easily, I hope it helps you to make easy healthy meals at home. ⠀ ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ Be-enriched helps to connect communities, through food, via their community canteens. I volunteer in their canteens and it’s wonderful to see people from all walks of life coming together to enjoy a delicious meal together. BUTTER PANEER ⠀⠀ ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Think buttery creamy rich gravy flavoured with lots of garlic, ginger & spices topped with some crispy curry leaves fried in ghee 😋 Served with cumin rice, more crispy curry leaves & homemade naan Hope you can try this one... it’s an absolute favourite in our house...I’m trying to focus on positives right now and my kitchen is definitely my happy place ❤️ Recipe for naan coming right up! Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ Ingredients: (Serves 4) ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 500gms Paneer + marinade ingredients 4 tablespoons yogurt 1 tsp turmeric 1 tsp Kashmiri chilli powder salt to taste ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 4 tablespoons of ghee/butter/vegan butter (and more to serve - this is butter paneer after all!) 1 stick cinnamon 8 black cardamoms 5 green cardamoms 2-3 tsp minced garlic 2-3 tsp minced ginger 1 tsp ground cumin 1 tsp ground turmeric 1 tsp ground coriander 1-2 tsp Kashmiri chilli powder 100gms tomato purée 1 tsp sugar 75gms cashew nuts soaked in 150mls water for an hour 100mls double cream/vegan alternative 1 tablespoon Dried Kasturi methi ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 1️⃣ Cut your paneer into small cubes & soak in hot water for 15mins to soften. Drain, mix with marinade ingredients & leave in the fridge 1 hour at least or overnight. To cook this - pan fry in a little butter & set aside or bake in an oven at @170’c for 15 mins 2️⃣ Add the ghee to a sauce pan on medium heat with the cinnamon & cardamoms to temper the spices & release the flavours. 3️⃣ Add the garlic & ginger and stir for a minute being careful not to burn the garlic 4️⃣ Next add the turmeric, cumin, coriander & chilli powder. Stir well for 30 seconds and add the tomato purée & about 100mls water & simmer for a few minutes until the oil comes to the surface 5️⃣ add the methi leaves & sugar at this point 6️⃣ Add the oven roasted paneer to the curry 7️⃣ Blend the cashew nuts & water to make a smooth paste - add this to the curry sauce & mix well 8️⃣ Add the double cream, stir & serve with a large knob of butter! 9️⃣ Enjoy! 😋 #drchintalskitchen #indianfood #dckindianfood #indianrecipes

CHOCOLATE DUTCH BABY PANCAKE ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ Credit for this mornings creation goes to my 10 year old... I mean why have I never made a chocolate Yorkie before 🤷🏻♀️😍 Topped with a caramelised banana & a little white choc drizzle... (Also his idea obvs!) ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ This was literally devoured in about 10 seconds so I think they liked it 🙌🏽 Literally just eggs, milk, flour & cacao -super easy... super delicious... Who fancies giving this a go? PEANUT BUTTER STUFFED BROWNIES ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ Did someone say chocolate week? Throwing it back to my favourite brownies... because everything is better when stuffed with peanut butter 😍😋 ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ As london moves to Tier 2 this weekend I guess I’ll be baking more brownies - who’s joining me?! Stay safe & well everyone Chintal x ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ RECIPE: the brownie part is from @bbcgoodfood - it’s the best brownie mix ever so no point trying to improve it - trust me on this one! ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ 350gms (ish) peanut butter - depends on how thick you want your layer of peanut butter 185gms unsalted butter 185gms dark chocolate @lindtuk 85gms plain flour 40gs cacao powder 100gms white chocolate 3 large eggs 275gms golden caster sugar ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ 1️⃣ First line your baking tin with Some baking paper and load on a thin layer of peanut butter (about 250gms if it to make a thin layer) - I used my favourite @pipandnut smooth peanut butter...freeze this layer until solid & save for later 2️⃣ Now for the brownie mix - break the dark chocolate into small chunks and melt with the butter in a microwave, 1 min at a time into its fully melted. Leave to cool 3️⃣ Preheat oven for 160’c fan & grease/line a 20cm square baking tin 4️⃣ whisk the eggs & sugar with an electric whisk until the mixture doubles in volume and is thick & creamy 5️⃣ Pour the cooled chocolate/butter mix into the egg/sugar mix and gently fold to mix 6️⃣ Sieve the flour and cacao powder and gently fold this into the mix too 7️⃣ Roughly chop the white chocolate and add to the mix 8️⃣ Be careful to fold in the ingredients gently so as to not knock out all the air 9️⃣ Pour half the mix into baking tin & then add your frozen layer of peanut butter & finally the other half of the brownie mix 🔟 Bake in oven for about 25 mins - check and add a few mins if needed. 🎃 PUMPKIN SOUP 🎃 ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Pumpkin season is well and truly here so I’m sharing a quick & easy soup recipe for you today - my pumpkin & sweet potato soup This was the recipe 2 years ago that persuaded my children that pumpkins are not just for carving but can also be eaten so I hope you enjoy it! Perfect for a cold and wet #meatfreemonday in London ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Serving soup in mini pumpkin 🎃 bowls is entirely optional but highly recommended to increase compliance 😉 Don’t have pumpkin - use squash - see my stories for more! Hope you’re all keeping warm, Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ Recipe: (serves 4) ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ 2 teaspoons cumin seeds 1 tablespoon olive oil 1 red onion - finely chopped 4-5 cloves garlic - finely chopped 2 medium sized sweet potatoes 🍠 (about 250gms) - peeled and roughly chopped Roughly same amount of pumpkin flesh - roughly chopped (about 1 mini pumpkin) 🎃 (I just roasted 2 small pumpkins as seen in the oven at 180’c with a little olive oil until soft & scooped out the flesh to use - keep the skin for a bowl ) 1 pint fresh vegetable stock/ or cube - I use @saykallo low salt veg cube Juice of 1/2 a lime - more to taste 1 teaspoon smoked paprika 1 red chilli 🌶 (optional - omit for kids) Salt & pepper to taste ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ Fry the onion, cumin, garlic in olive oil until soft. Then add all the other ingredients, cover in vegetable stock (add extra water if needed) and simmer for about 30 mins. Once fully cooked blend to smooth and sprinkle with the toasted pumpkin seeds, paprika & serve with a slice of delicious sourdough 🥖 ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ P.S. CHICKEN/PANEER TIKKA MASALA PIE . ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ For today’s #nationalcurryweek instalment I’m throwing it back today to a family favourite.... homemade chicken tikka masala & spinach pie....mild enough for the whole family to enjoy because who wants to make separate meals 🤷🏻♀️ Swap out the chicken for paneer or tofu for a plant based 🌱 version ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ If you don’t fancy a pie you can just make the curry and enjoy it with rice or naan 🙂 Hope you can try it and pls do tag/DM me if you do - I love seeing your photos 🤗 Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ 👩🏻🔬 Recipe: (serves 4) 🌱 vegetarian option add paneer . . 500gms chicken breast or paneer - chopped 1 large red onion - finely chopped 250gms baby spinach leaves 1 teaspoon coconut oil 1 cinnamon stick 5 Black cardamoms 4-5 cloves garlic - minced 4cm ish chunk ginger - minced 1 heaped tsp cumin seeds 1-2 tsp turmeric 1-2 tsp ground coriander powder 1- 2 tsp garam masala (skip if you would like it milder) 140gm tin tomato purée 1 large handful coriander - finely chopped 100mls double cream or coconut milk Fry the red onion in the oil. Add the cinnamon stick, black cardamoms & cumin seeds. When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2🌶 if you like it spicy. Stir for a couple of minutes. Add your choice of protein & brown Finally, add a 140gm tin of tomato purée, 1 pint of water, the spices & a handful of chopped coriander. Simmer for about 20 - 30 minutes until cooked. Add a little water if the sauce seems too dry. Stir in the washed baby spinach leaves and cook for a couple of minutes to wilt them Just before serving stir in about 100mls of double cream or coconut cream if dairy free To turn it into a pie, just cool the curry down and keep it in the fridge. When ready, pour into an oven proof dish and cover with a layer of puff pastry - (I used 200gms ready made @jus_rol rolled out thinly to cover my dish Brush with some egg wash Sprinkle with Nigella seeds Bake in the oven @200’C for 20 mins 😋 #dckindianfood #drchintalskitchen

October is breast cancer awareness month. Do you know how to examine your breasts for changes? Did you know you should be doing this regularly – once a month? ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ▪️Breast cancer diagnoses have been down across England during the period of the pandemic ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ▪️Less people are presenting to their GPs with symptoms of breast cancer during the pandemic. ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ As someone who is at a higher risk of developing breast cancer this is something close to my heart. I am passionate about spreading the word and raising awareness. We may be in the middle of a global pandemic right now. However, it is just as important to examine your breasts regularly and see your GP/Family doctor if you have any concerns. I am so lucky to have both sets of grandparents nearby to help me. Pre-pandemic they helped me every week with childcare. The pandemic has been hard for us and them. PEA FRITTERS ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ Kicking of Monday morning with pea fritters served with an avocado chutney swipe 👉🏽 to see the weaning/baby friendly version (minus the chilli ) One of my favourite breakfasts as they are so quick and easy to whip up and I know I’ve sent my boys to school with a healthy fibre and protein rich breakfast that should keep them full until break time. Plus I’ve got some veggies in at breakfast time 🙌🏽 ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Also handy for breakfast on the go (as let’s face it... Monday morning means sometimes breakfast is finished in the car 🤦🏽♀️) ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Perfect for weaning as they can be held by little hands 👋🏽... and they are super soft and delicious. They are a great way of exposing babies to spices like turmeric and are allergy friendly as these fritters are dairy, egg & gluten free. I hope you can try them! 🥟 DUMPLINGS 🥟 ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Request for dumplings from my little dumplings 👦🏻👦🏻... one of our favourite meals for our Friday night #fakeaway and if you get ready made wrappers (available in most Asian stores) you can whip them up in minutes. For a step by step tutorial check out my story highlights 🤗 It’s also a great way to get kids in the kitchen - my boys love making them! ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ I stuffed mine with spinach and prawns but you can use mixed vegetables if you’re vegan - mushrooms work really well. Chintal x ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Recipe: . . 30 gyoza wrappers (ready made or make your own) 150gms prawns (or shiitake mushrooms 🍄 finely chopped) 4 spring onions - finely chopped 1 teaspoon fresh grated ginger 2-3 cloves garlic - minced Soy sauce to taste 2 large handfuls of baby spinach - finely chopped 1 teaspoon sesame oil . Fry the spring onions in the oil, add garlic, ginger & prawns. Season with soy sauce pans fry for a few minutes. Next stir in the spinach to wilt it very slightly. COCONUT CHICKPEA & SPINACH CURRY ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ I needed to make a quick dinner last night so I made this with what I could find in my store cupboard. My boys said it was EPIC 😋 Literally whipped up in 15 minutes ... creamy coconut.... chickpeas and a bag of baby spinach with a little ginger and spice. A perfect Friday night #fakeaway meal for the whole family (suitable from 6 months - swipe 👉🏽 to see baby serving suggestion) ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ I hadn’t planned to share so I didn’t measure anything 🤦🏻♀️ ( when did I start sounding like my mum 😂) But if you would like the recipe, let me know and I’ll make it again and measure! OKRA FRIES ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ This was of my very first posts when I started my blog and is still a favourite in our house....however, my okra fries got a total upgrade yesterday using the air fryer - what a game changer! Perfect crispy fries in a fraction of the time - although you can still bake them in the oven if you don’t have an air fryer don’t worry 🤗⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ I was chatting to my friend @drpunamkrishan on our recent weaning instaLive (saved on her IGTV - link in my stories) about exposing children to a wide variety of tastes and flavours as early on as possible - I would say these are suitable from around 10 months after initial first foods and weaning is established They are great way to get more adventurous with new vegetables, introduce spices (turmeric) and increase variety into your diet. ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Serve as they are or with my avocado chutney - search #dckindianfood for the recipe I hope you can try them - please do let me know if you do - I love seeing your remakes! 😍PANI PURI 😍 ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ Hands up if you love Pani Puri 🙋🏻♀️🙋🏻♀️🙋🏻♀️ Indian Street Food at its best! 🙌🏽 If you haven’t heard of them... Pani Puri are crispy hollow ‘Puri’ filled with chickpeas, potato & onion spiced up with a tamarind chutney The ‘pani’ which means ‘water’ is a sweet and spicy tangy water that is poured onto the stuffed Puri just before eating... You basically get a flavour explosion in your mouth of sweet, spicy, tangy, sour all in one #ifyouknowyouknow ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ My children absolutely love these too! I wrote up this recipe with the help of my mum for a special feature coming very soon (clue in my stories 😉) that I cant wait to share with you!! 😷 FACE COVERINGS 😷 ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Face coverings are the new normal... however, all but 1 of the patients I saw in clinic this morning were NOT wearing them properly. So I wanted to share my top 🔟 tips on how to wear your face coverings Safely and effectively... you can find more information using the link at the bottom of this post ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ 1️⃣ All face coverings should cover the NOSE & MOUTH 😷 ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ 2️⃣ If your covering has a wire - that goes at the top & can be moulded to fit around your nose to create a better seal ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ 3️⃣ If using a surgical disposable mask - the blue bit is the outside of the mask ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 4️⃣ The mask must fit comfortably but securely against the side of the face & be secure to the head with ear ties or ear loops ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ 5️⃣ All face masks are to be used once & then either disposed (if disposable) or washed before reuse. Change a face covering if it becomes damp ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ 6️⃣ Handle the mask by the straps, avoid touching the part in contact with your mouth and nose, as it could be contaminated with virus ⠀⠀ ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 7️⃣ When visiting your GP, we will ask you to wear a face covering in the waiting room & during your appointment ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 8️⃣ After use, remove, fold inside out or simply pop into a sealed plastic bag until disposal or washing. So I’m part of a medics foodie group on @facebook & the initiation recipe is this @bbcgoodfood crinkle cookie recipe... I can see why now! A great recipe to get #kidsinthekitchen over the summer holidays! KING OYSTER MUSHROOMS ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Quick & easy #meatfreemonday inspo today (although for full disclosure we actually had this last Thursday 🤷🏻♀️)... delicious king oyster mushrooms in a gingery broth with veggies 😋 I picked up the recipe card for this in @waitroseandpartners just before lockdown and have only just managed to make it. I do miss popping to my local waitrose and collecting these cards but at least I can finally make recipes from the collection I already have 😂 ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Unfortunately there was no persuading my children to eat the mushrooms so they had the original version with seabass & minus the chilli 🌶 (swipe 👉🏽) ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Recipe: (Serves 2) ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ 200gm tenderstem broccoli spears 90gms baby pak choy 1 low salt stock cube 2 tbsp lost sauce 15gms fresh ginger - julienned 2 star anise 1 tblsp maple syrup (optional) 2 sea bass/sea bream fillets or 2 large king oyster mushrooms 275gms fresh egg noodles 2 spring onion - finely sliced 1 red chilli finely sliced ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 1️⃣ Wash and slice the mushrooms in half & score as seen. Blanch the broccoli & pak Choy in about 500mls of water for a couple of minutes drain & keep aside 2️⃣ Return the pan of water to the heat and add the stock cube, soy sauce, ginger, star anise. Bring to boil & simmer for 5 mins 3️⃣ Poach the fish (if using) in this broth and simmer until fully cooked and opaque. Thank you BBC Good Food for the clear instructions... it was a labour of love but totally worth it! I especially loved the beautiful story behind the recipe ❤️ Friday night #fakeaway taking us on a trip to Iran... BLUEBERRY YOGURT BITES ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ London is HOT HOT HOT 🌞 So we are planning on whipping up these frozen yogurt bites to keep us cool 😎 @lego mould optional but highly recommended for kids (and big kids 😂) Freeze ice cube versions of these to pop into your smoothies to keep them cool... or freeze in a lolly mould, perfect for teething babies too 👶🏻 ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Sharing some more recipes to keep cool over the weekend heatwave in my stories I hope they are helpful ... ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Recipe: (makes 20 bites depending on the size of your mould) ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 500gms Yogurt - I used @yeovalley vanilla yogurt.
