Who says healthy food has to be boring… let me show you how you can make food fun for the whole family but especially kids… (and big kids too!)

SWEET POTATO SALMON FISHCAKES Salmon & sweet potato fishcakes with a quinoa coating served with peas & peashoots. Serves 4, costs £4.83 One of the recipes from my budget family recipes in the March issue of @bbcgoodfood magazine (still feels so exciting writing that! 🥰) So simple and delicious and suitable for the whole family from 6months + I hope you can try it! Chintal x Recipe: Ingredients: 750gms sweet potatos (approx 4) 65gms quino (red& black mix if possible) 1 tbsp oil plus extra for brushing 240gms skinless boneless salmon fillets Small bunch of chives - chopped (Optional - few spring onions - chopped) 90gms pea shoots/water cress & 200gms cooked frozen peas to serve 1️⃣ Wash the sweet potatos, prick them a few times with a fork and cook in the mocrowave for about 10 mins according to size. Alternatively bake in the oven at 180C for about 45mins. Scoop the cooked flesh into a bowl. Reserve the skins to make crisps becuase we are all about #nofoodwaste @ocadouk . 2️⃣ Tip the quinoa into a saucepan with 150mls boiling water, cover & summir for about 15 mins until the water has been absorbed. Drain well. Spread out on a plate and set aside to cool. 3️⃣ Drizzle a little oil in a frying pan over a medium heat, then fry the salmon fillets for a few minutes on each side. Tip into the bowl with the sweet potato, then add the chives/spring onions. Mix well to break up the fish & season to taste. 4️⃣ Hear fhe oven to 180C fan. Form the mix into 8 equal sozed fishcakes. Dip each fishcake into the plate of quinoa and cost fully, pressing to help it stick. Brush with a little olive oil & place on a baking tray lined with baking parchment. Every year I set myself the task of creating an imposible birthday cake for my boys... it usually takes hours of modelling cake & fondant icing into some kind of shape that vaguely resembles the ‘google’ cake they have chosen and working into the early hours of the morning. I literally devote days to this task annually! This year, Yash, with his second lockdown birthday, simply requested... a chocolate orange cake with a whole chocolate orange on top... I mean sounds simple right? What could go wrong? Then for some reason I managed to turn chocolate orange ganache into a gloop twice 😭 How? I have made it so many times before!! (You can see the congealed mess in stories) 1/2 a kilo of delicious dark chocoate later - it had to be used...I had no other option... I was so upset 😞 My cake was a disaster. My little man came running down in the morning, he didnt even notice the conglealed ganache... instead the only thing he said was ‘Wow! Amazing - I love it mummy!!! ... Wow you made a waterfall with chocolate orange eggs too!!!!’ Just like that.. my cake was perfect again If only we could see everything through the eyes of a child 🥰🥰🥰 Happy 9th birthday little man... 3/4 INGREDIENT NO BAKE MILLIONAIRE SHORTBREAD You are just 3 or 4 ingredients and about 15 minutes away from this stack of caramel goodness! I promised you the recipe about a week ago but the day job 👩🏻⚕️ has beeb keeping me busy... BUT....here it is - easy steps in my stories for you to follow along if you prefer ❤️ SO EASY anyone can make it - Its a great one to click ‘save’ and keep the kiddies busy over the Easter break too! Happy Friday everyone! 🎉 Chintal x Recipe: (makes 8-10) (Admittedly its not actually a shortbread but an almond base & still delicious! ) 200gms ground almonds 200gms almond butter - it has to be a runny one like @pipandnut 2 tablespoons honey (optional - use extra almond butter otherwise) 100gms caramel (I used a ready made can @carnation) 100gms dark chocolate 1️⃣ Mix 200gms ground almonds, 100gms almond butter & the honey in a bowl. Get your fingers in and rub the ingredients together to full mix. 2️⃣ Press this mix firmly into a lined loaf tin. You have to press really hard and creat a smooth surface 3️⃣ Spoon on a thin layer of caramel & place this in the freezer to set whilst you make the top layer 4️⃣ Melt the chocolate for 1 min in a microwave, add 100gms nut butter & stir well to combine 5️⃣ Drizzle the chocolate mix over the caramel layer (see stories). Be careful - you want to create a separate layer. If you are not confidant with this you could always wait until the caramel later is fully frozen and then drizzle 6️⃣ Tap the tin on the worktop lightly to smooth out the choc layer. BUTTERNUT & SWEET POTATO COCONUT CURRY Literally the quickest easiest creamiest curry EVER & suitable for the whole family from 6months onwards I served this with rice, chapatti & a side salad (swipe 👉🏽 to see a baby 👶🏻 friendly serving suggestion) Let me know if you try it Chintal x ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Recipe: (Serves 4) 600gms squash/sweetpotato - cubed 1 teaspoonush minced ginger 1/2 tsp mustard seeds 1 tsp cumin seeds 5 curry leaves (fresh if possible) 2 tsp turmeric 4 tablespoons tomato puree 400ml tin coconut cream 1 tablespoon rapeseed oil Handful of chopped fresh coriander (about 30gms) Salt to taste Method: 1️⃣ In a saucepan, heat the oil and add the mustard seeds until they start to pop. Then add the curry leaves, cumin seeds & ginger & stir on a low heat for 1 min 2️⃣ Next add the tomato puree & sqauash/sweet potato, coriander, turmeric & salt to taste. Stir well 3️⃣ Top with about 300mls water, enough to cover the squash/SP cubes. Put a lid on the pan and simmer for about 10-15mins until the squash is cooked through & the water evaporated 4️⃣ Pour in the coconut cream (leave a little for garnish if you like) & stir well 5️⃣ Remove the lid and simmer for a few minutes until you have your desired consistency 6️⃣ Garnish with coconut cream and coriander. CARROT, CORIANDER & LENTIL SOUP (With hidden courgette 😉) Quick & easy soup for the whole family - suitable from 6m + (swipe 👉🏽to see)with an optional drizzle of homemade wild garlic oil - tis the season 💚 ✅ Delicious ✅ Quick & easy ✅ Protein ✅ Veggies Top tip: Make double & freeze half for a rainy day! I just defrosted this for hubbie & I WFH lunch. Served with buttery sourdough. My boys are not fans of ‘cooked squashy courgette’ so I often add them to soups and sauces that they love. All the flavour - none of the squashy squash! Recipe: 1 red onion - chopped 1 tablespoon olive oil 5 cloves garlic - finely chopped 2 tsp cumin seeds Large handful of corriander - chopped 2/3 cup of red lentils - washed & soaked for 1 hour or overnight 400gms carrots - roughly chopped 1-2 courgettes 1 low salt stock cube Salt to taste Fry the onion in the olive oil When soft, add the garlic & cumin seeds mix for 1 min Add all the rest of the ingredients & pour on boiling water cover all the veg. Bring to the boil. I was chatting to a patient recently who had delayed their blood test on 3 occasions because they were nervous about the risks of attending. “Shall I just wait until this is over doctor?” I recently attended for a blood test myself and was surprised at how quiet the usually super busy service was. What I also noticed: 🔹 Everyone was wearing appropriate PPE 🔹 Each phlebotomist had a dedicated work station 🔹 The stations were all clean (see pic 2) 🔹 Social distancing was observed 🔹 I was in and out in under 10 minutes 🔹 There was no queue at my appointment time 🔹 Please note NHS blood tests are all by appointment only - no walk ins 🔹 My GP had my results the next day 🙌🏾 So if you have been referred for a blood test by your doctor, then they have, with you, weighed up the benefits against the risks so please do attend. If you are unsure, please do call your GP to discuss your individual case - we are very happy to help. Hope this is helpful if you do need to attend for a blood test soon, Chintal x

Fridaynight quiz night again 😜 Can you guess the secret ingredient in my Fillet ‘o’ fish?! My cousin @dhruptij sent me a picture of her #fakeaway fillet a few weeks ago from that well known restaurant that reminds me of my uni days! I have been dying to make it! @ocadouk delivered my fillet of cod so I finally got a chance today! But... can you guess the secret ingredient in my fillet? CHICKEN/PANEER TIKKA MASALA PIE ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ I’m throwing it back to a family favourite for #britishpieweek .... homemade chicken tikka masala & spinach pie....mild enough for the whole family (suitable from 6m+) to enjoy because who wants to make separate meals 🤷🏻♀️ Swap out the chicken for paneer or tofu for a plant based 🌱 version ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ If you don’t fancy a pie you can just make the curry and enjoy it with rice or naan 🙂 Hope you can try it and pls do tag/DM me if you do - I love seeing your photos 🤗 Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ 👩🏻🔬 Recipe: (serves 4) 🌱 vegetarian option add paneer . . 500gms chicken breast or paneer - chopped 1 large red onion - finely chopped 250gms baby spinach leaves 1 teaspoon coconut oil 1 cinnamon stick 5 Black cardamoms 4-5 cloves garlic - minced 4cm ish chunk ginger - minced 1 heaped tsp cumin seeds 1-2 tsp turmeric 1-2 tsp ground coriander powder 1- 2 tsp garam masala (skip if you would like it milder) 140gm tin tomato purée 1 large handful coriander - finely chopped 100mls double cream or coconut milk Fry the red onion in the oil. Add the cinnamon stick, black cardamoms & cumin seeds. When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2🌶 if you like it spicy. Stir for a couple of minutes. Add your choice of protein & brown Finally, add a 140gm tin of tomato purée, 1 pint of water, the spices & a handful of chopped coriander. Simmer for about 20 - 30 minutes until cooked. Add a little water if the sauce seems too dry. Stir in the washed baby spinach leaves and cook for a couple of minutes to wilt them Just before serving stir in about 100mls of double cream or coconut cream if dairy free To turn it into a pie, just cool the curry down and keep it in the fridge. When ready, pour into an oven proof dish and cover with a layer of puff pastry - (I used 200gms ready made @jus_rol rolled out thinly to cover my dish Brush with some egg wash Sprinkle with Nigella seeds Bake in the oven @200’C for 20 mins 😋 #dckindianfood #drchintalskitchen #chickenpie

KATSU PRAWNS & GOCHUJANG LIME MAYO ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ Crispy prawns (defo works with vegan prawns too) with a spicy gochujang mayo was a total winner for the whole family - we love a #fakeaway option in our house! I served this alongside some salt and pepper tofu, homemade sushi and pretended I was sitting in @zumalondonofficial Ok not quite the same 😝... but almost a Friday night out! MISO RAMEN 🍜 ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ Quick & easy lunch bowl enjoyed by the whole family... with a special helping of my crispy chilli oil 🌶 (I did say I put it on everything!) Literally takes minutes to put together & my kids love it! Just what we needed after some fun in the snow ❄️ ⛄️ For a vegan option - swap the boiled eggs for tofu or veggies of choice 🥬🍆🌽🥒 I've also made my 'on the go' noodle pot version of this soup ready for work tomorrow - just pour in hot water and lunch is ready! see my stories for the link! Chintal x Recipe: (serves 4) To make your soup base - add 2 heaped tablespoons of miso paste to 1 litre of boiled water/vegetable/chicken stock in a large saucepan on a medium heat Add your noodles of choice (if using instant packet noodles - add in the flavour sachet instead of a stock cube) If using water add a stock cube Boil until noodles cooked, pour into 4 bowls Top your ramen with whatever you like! CRISPY CHILLI OIL Swipe 👉🏽 to see my favourite way of using this but I put this stuff on literally EVERYTHING Anyone else with me? 😋 As promised here’s my crispy chilli oil recipe... now back to my dumplings 🥟 drowning in chilli oil & soy sauce 😍 Chintal x ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Recipe: 3-4 large shallots 2 bulbs of garlic 4 star anise 1 stick cinnamon 2 black cardamoms 100gms dried red chilli 500mls oil of choice - I like to use a light olive oil or peanut oil Salt to taste 1️⃣ first pop some gloves on and cut open the chillies - remove the seeds and crush to chilli flakes, place a aside 2️⃣ finely slice/chop the shallots 3️⃣ finely peel and chop/thinly slice the garlic 🧄 4️⃣ in a pan heat the oil on a medium heat and once hot add the shallots, cinnamon stick, star anise & cardamoms 5️⃣ be careful to not burn the onions, you want to cook them to brown and crispy but not burnt. As they start to brown, turn down the heat to low and add the garlic and mix well to cook the garlic but not burn it 6️⃣ next add the chilli flakes & salt to taste, stir well & turn off the heat. 7️⃣ once cool, store in an airtight container in the fridge #drchintalskitchen #chillioil #chilli #oil

LEGO FUDGE/PENDA Penda are not just for Diwali 🪔 they can be made anytime of the year, in any shape (including LEGO!) and for kids of all ages (and by that I really mean adults 🙋🏻♀️😉) If you are stuck for a Saturday afternoon activity staying in - you’re only 4 ingredients & 10 minutes away from making these! Have a wonderful weekend everyone ❤️ Chintal x RECIPE: 1 tin sweetened condensed milk - 397gms 2 heaped tablespoons ghee/unsalted butter 2 cups milk powder 2 tablespoons milk 1 tsp vanilla extract for this version or Pinch saffron (optional) Pinch ground cardamom (optional) Pistachios & rose petals to decorate (optional) 1️⃣ Melt the ghee in the microwave, heat the milk & add both to a large bowl with the saffron & cardamom 2️⃣ Stir in the milk powder & condensed milk. Mix well until you have a smooth paste 3️⃣ Microwave the mix for 1 minute 4️⃣ Stir REALLY WELL. You want no lumps.. 5️⃣ Repeat steps 3 & 4 twice. You want it to be a thick batter that starts to solidify as it cools... otherwise heat another 30s at a time & MIX WELL 6️⃣ Allow mix to cool slightly until its cool enough to handle and press into mini moulds of choice before it hardens 7️⃣ After a few minutes, pop out of the mould, they should still be soft 8️⃣ Press on chopped pistachios & rose petals (optional) 9️⃣ leave to fully cool & firm up 🔟 Enjoy! This is my take on that delicious indo-Chinese crispy chilli paneer you get in Indian restaurants. Just a few simple steps gets you this delicious crispy paneer with that characteristic sweet and spicy indochinese fusion flavour all in one! You can also use extra form tofu for a vegan 🌱 option Tone down the Sriracha or swap it out to make this kiddie friendly Serve as a starter on its own, with naan or cumin rice. P.S. it’s not just the kids 😂 The lovely team @childrensalon asked me to share some of our favourite family snack options that hit that sweet spot and pack in some nutritious ingredients along the way so swipe 👉🏽 to see a few of ours! Recipe for the date & nut balls below Chintal x ⠀⠀⠀⠀⠀⠀ ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ Ingredients: • 180gms juicy medjool dates • 4 tablespoons cacao powder • 4 heaped tablespoons cashew butter or peanut butter • 300gms nuts (I used pecans, cashew nuts, walnuts and pistachios) • 100gms sunflower seeds • Toppings of choice: e.g. chia seeds, desiccated coconut, sesame seeds, rose petals, pistachios Method: 1️⃣ First blitz all nuts and seeds in a food processor to make a powder 2️⃣ Next, add all the rest of the ingredients to the food processor and pulse blend 3️⃣ With each pulse the ingredients will start to combine 4️⃣ Keep pulsing until the mix starts to clump together 5️⃣ Taking about 1 tablespoon of the mix at a time, use your hands to mould about 20 small balls and place in a plate 6️⃣ They can be enjoyed as they are or rolled in your choice of topping 7️⃣ To coat in your choice of topping, place your topping on a plate and straight after forming your date ball, roll it in your choice of topping 8️⃣ Enjoy right away or store in an airtight container in the fridge for a couple of weeks – if they last that long! ⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ #drchintalskitchen #snacks #cake #healthyfood #healthysnacks #yum #kidsfood #recipesforkids #snackballs

RED LENTIL DAAL Friday night #fakeaway idea for you today with this delicious daal served with cooling raita & mini (mini anything is always a win with my kids 🤷🏻♀️) naan to dunk right in 😋 Recipe inspo from my favourite food mag @bbcgoodfood - thank you @barney_desmazery for a fab recipe. I’ve never put prawns in my daal before! For a vegan option, leave them out or I love to add spinach to my daal 👶🏻 Weaning/young children version: miss out the salt, chilli powder & garam masala. Take out a portion and add it in for adults after! Have a great weekend everyone! Chintal x Ingredients: 150gms red lentils 2 tbsp rapeseed oil I large onion - finely chopped 8 garlic cloves - minced Thumb sized chunk ginger - minced 1 tablespoon cumin seeds 1 tsp turmeric powder 1 tsp Kashmiri chilli powder 1 tsp garam masala 1 tsp ground coriander powder 2 tablespoons tomato purée 1 tablespoon tamarind paste 1 tin chopped tomatoes 200gms king prawns Handful chopped coriander Green chilli, coriander, raita, naan to serve Method: 1️⃣ rinse the lentils a few times and leave to soak in water for a few hours 2️⃣ heat the oil in a saucepan, add the onions and cook until they start to turn brown 3️⃣ Add your cumin seeds, ginger & garlic & stir for 1 min 4️⃣ add the tomato puree & tamarind, stir 5️⃣ add the chopped tomatoes & simmer for about 10 mins 6️⃣ Rinse the lentils again until the water runs clear & add to the pan along with 1.5L of water. Add salt to taste. Bring to the boil & add the spice powders. Simmer for about 1 hour until the lentils are soft and cooked. BUTTER PANEER PASTRY PARCELS - Swipe 👉🏽 If you have any left over butter paneer from my last post... Here’s what to do with it! Pick up some ready made puff pastry (or make your own if you’re feeling really adventurous) & stuff it with your left overs! Delicious for lunch the next day served with a side salad 🥗 You could really do this with pretty much any curry leftovers.. my mum used to make extra samosa or pea kachori mix growing up and make these puff pastry ‘samosas’ as snacks - YUM! BUTTER PANEER ⠀⠀ ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ Think buttery creamy rich gravy flavoured with lots of garlic, ginger & spices topped with some crispy curry leaves fried in ghee 😋 Served with cumin rice, more crispy curry leaves & homemade naan One of our favourite Indian meals 😍... top tip: make double of this recipe as I have a brilliant way to use up the extra coming up tomorrow ❤️ Can you guess what I did with it? Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ RECIPE: Ingredients: (Serves 4) ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀ 500gms Paneer + marinade ingredients below 4 tablespoons yogurt 1 tsp turmeric 1 tsp Kashmiri chilli powder salt to taste ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ 4 tablespoons of ghee/butter/vegan butter (and more to serve - this is butter paneer after all!) 1 stick cinnamon 8 black cardamoms 5 green cardamoms 2-3 tsp minced garlic 2-3 tsp minced ginger 1 tsp ground cumin 1 tsp ground turmeric 1 tsp ground coriander 1-2 tsp Kashmiri chilli powder 100gms tomato purée 1 tsp sugar 75gms cashew nuts soaked in 150mls water for an hour 100mls double cream/vegan alternative 1 tablespoon Dried Kasturi methi ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ 1️⃣ Cut your paneer into small cubes & soak in hot water for 15mins to soften. Drain, mix with marinade ingredients & leave in the fridge 1 hour at least or overnight. To cook this - pan fry in a little butter & set aside or bake in an oven at @170’c for 15 mins 2️⃣ Add the ghee to a sauce pan on medium heat with the cinnamon & cardamoms to temper the spices & release the flavours. 3️⃣ Add the garlic & ginger and stir for a minute being careful not to burn the garlic 4️⃣ Next add the turmeric, cumin, coriander & chilli powder. Stir well for 30 seconds and add the tomato purée & about 100mls water & simmer for a few minutes until the oil comes to the surface 5️⃣ add the methi leaves & sugar at this point 6️⃣ Add the oven roasted paneer to the curry 7️⃣ Blend the cashew nuts & water to make a smooth paste - add this to the curry sauce & mix well 8️⃣ Add the double cream, stir & serve with a large knob of butter! 9️⃣ Enjoy! 😋 #drchintalskitchen #indianfood #dckindianfood #indianrecipes

Hope you managed to enjoy some snow ❄️ somewhere Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ Recipe: 1 pack of Oreo @oreouki 3 Ripe bananas - mashed 🍌 🍌🍌 200gms oats - ground to a powder or oat flour I used @flahavansuk 100gms butter/plant based butter 3 eggs 🥚 🥚🥚 ( 🌱 3 chia eggs + 1/2 an extra banana) 1 & 1/2 teaspoons baking powder 1 tsp oats to top . . COVID 19 VACCINES 🦠💉 Today I was a vaccinator for one of the NHS vaccination centres in London & I also received my Covid-19 vaccine so I wanted to share some images (swipe 👉🏽) & insights from the vaccination clinics. SWEETCORN EGG DROP SOUP Another quick and easy lunch idea today for soup season! ALMOND BERRY BANANA CAKE 🎂 Because banana bread is soooo last lockdown 💁🏻♀️ So Fridays used to be my day off from work to have some ‘me time’ (aka squeeze in a workout, do housework & catch up on life admin 😂). However, today, it was mummy’s home economics lesson & this is the result! A delicious almond & oat flour banana & berry bake 😍. Serving suggestion: warm with vanilla custard or ice cream! 🍜 MISO NOODLE POTS 🍜 . If like me, you are finding yourself making 123586483 meals a day... here is a quick & easy lunch idea the whole family will love. Demonstrated by mini me 👦🏻🥰 It’s the easiest recipe to prep the night before & you can throw in lots of fresh veggies...or anything you have left over from your evening meal... we used rice noodles, spinach, edamame, mushrooms, spring onions, coriander chilli & tofu. But you could also add cooked prawns, chicken or any other vegetables. In fact, I made peanut butter chicken version (you can find it further down my page) and it was so good! All you need to do is pour in boiling water when you’re ready to eat 😋 Your very own pot noodle 🍜 Recipe in the video - I recommend sound on 🎤🥰 Chintal x Edit: lots of questions in DMs about which miso I used - I used @clearspringuk barley miso - they have sachets which are handy for on the go or you can buy unpasteurised in a jar. If making this ahead of time - put all the WET INGREDIENTS AT THE BOTTOM & dry noodles on top so it can be kept ready. 🎄 BRUSSEL SPROUT PAKORA 🎄 Brussel sprout pakora cooked live this morning with my lovely friend @drsarakayat for herself and her 6 month baby boy Harris. A family friendly recipe suitable for weaning (from 6M +) and a great way of introducing spices into children’s food... I’m hoping Harris will love them Sara! ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ So if you’ve got any leftover over sprouts after Christmas dinner... turn them into Pakora in less than 15 minutes with this super easy recipe 🙌🏽 Even my kids enjoyed these & they turn their noses up at sprouts! Let me know if you fancy giving these a try! Chintal x Recipe: (approx 20 pakora ) 250gms Brussel sprouts 1 red onion 200gms Gram flour (chickpea flour) 200-250mls water 1-2 teaspoons turmeric 1 -2 teaspoon cumin powder 1 teaspoon minced garlic/ginger Hand full of chopped coriander Salt to taste (not for babies!) 500mls oil for deep frying or spray pakora with a little oil and use an air fryer 1️⃣ Wash and slice the sprouts into thin slices (for babies - steam/part boil them first but not too much or they will end up mush!) 2️⃣ Add all the ingredients except the water into a bowl 3️⃣ Add 1/2 the water & Mix really well 4️⃣ Add the rest of the water slowly about 10 mls at a time until you have a thick batter coating the sprouts 5️⃣ Adjust the water as needed, if the sprouts are quite wet you may not need it all. 6️⃣ If the batter is too loose and not holding together add in a tablespoon or 2 of the gram flour 7️⃣ Heat the oil on a medium heat 8️⃣ Drop heaped tablespoon sized pakoras into the hot oil and deep fry for a few minutes until they just start to turn a golden brown 9️⃣ Remove and drain on kitchen paper & serve hot! 😋 🔟 Sprinkle with a little chat masala if you have it and serve hot with - tamarind or coriander chutney (recipe further down my page) @nanaschutneys also have some delicious chutneys that would work well with these ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ __________________________ #drchintalskitchen #pakora #sprouts #bhajia #bhaji #onionbhaji #glutenfreefood #glutenfreerecipe #indianfood #indianrecipe #easyindianrecipes #yum #healthyrecipes #easyrecipes #yum #quickandeasy

Cucumber slices 🥒 Cream cheese 🧀 Smoked salmon Cucumber thinly peeled on its side 🥒 Pomegranate seed 💎 🌱 Vegan? I’ve got you covered - use roasted pepper and cashew cream cheese 🌱 Literally layer the above as seen in the picture and you are ready to go! To make the tree - peel layers of cucumber, fold to make the ‘tree’ and poke with a cocktail stick to keep everything in place! I used the citrus 🍊 smoked salmon from @waitroseanspartnerspr which has this beautiful edible gold glitter but you can use any smoked salmon ❤️ Enjoy! 🥞🎅🏻 PANCAKES 🎅🏻🥞 Yay its DECEMBER! 🥞🎅🏻 Well this breakfast went down well in our house! Our usual banana/oat blender pancakes got a little Christmasy berry & cream makeover 😋 Right ... finally time to buy our🎄... I think I’m the only person in the world who doesn’t have it up yet! This year, I’m trying to be more sustainable so we’re going to buy an artificial tree we can reuse every year - Any recommendations? Thank you! Chintal x Recipe: 2 bananas 2 large eggs 3/4 cup oats 1/2 tsp baking powder (for fluffy 🥞) 1/2 tsp cinnamon (optional but advised!) Oil for frying Toppings: Strawberries, blueberries & cream to decorate. BUTTERNUT & SWEET POTATO COCONUT CURRY Literally the quickest easiest creamiest curry EVER & suitable for the whole family from 6months up I’ve served with rice, chapatti & a side salad (swipe 👉🏽 to see a baby 👶🏻 friendly serving suggestion) I had a bag of diced butternut squash & sweet potato from @ocadouk in my fridge to use up & seeing as I’m all about #ZeroWaste I turned it into this delicious curry! (We had soup for lunch otherwise that was option 2!) Happy Friday everyone! Chintal x ⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Recipe: (Serves 2 or 4 as a side dish) 350gms squash/sweetpotato - cubed 1 teaspoon minced ginger 1/2 tsp mustard seeds 1 tsp cumin seeds 5 curry leaves (fresh if possible) 1 tsp turmeric 3 tablespoons tomato puree 160ml tin coconut cream 1 tablespoon rapeseed oil Handful of chopped fresh coriander (about 30gms) Salt to taste Method: 1️⃣ In a saucepan, heat the oil and add the mustard seeds until they start to pop. Then add the curry leaves, cumin seeds & ginger & stir on a low heat for 1 min 2️⃣ Next add the tomato puree & sqauash/sweet potato, coriander, turmeric & salt to taste. Stir well 3️⃣ Top with about 200mls water, enough to cover the squash/SP cubes. Put a lid on the pan and simmer for about 10-15mins until the squash is cooked through 4️⃣ Pour in the coconut cream (leave a little for garnish if you like) & stir well 5️⃣ Remove the lid and simmer for a few minutes until you have your desired consistency 6️⃣ Garnish with coconut cream and coriander. BLENDER SHEET PANCAKES Weekends = pancakes in our house 🥞 But if you don’t have time for all the flipping (there is a LOT of flipping involved in our house of 4! ) Then try my blend & bake sheet pancakes... you literally blend all the ingredients, pour into a baking tray & pop into the oven to bake... 💁🏻♀️ Literally the quickest easiest breakfast ever... plus happy kids with Pan - CAKES for breakfast 🙌🏾 Suitable for all ages 6m+, they are a great way to introduce and keep nuts in your babies diet Hope you can try it! I promise you will not regret it! Chintal x Recipe: 20cm square pan 2 large RIPE bananas (brown spots essential) 3/4 cup oats 3/4 cup ground almonds 3 eggs 1/2 tsp baking powder Toppings: raspberries, blueberries & flaked almonds (use ground nuts for <5 yrs). EASY DIWALI PENDA ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ If you need a last minute Diwali sweet recipe that you can whip up in under 15 minutes - I’ve got you covered! Just a few ingredients needed and minimal time - microwave penda to the rescue! Penda are Indian sweets made to share at times of celebration... whilst the celebrations are different this year... we will still celebrate and I just whipped up a batch of these to deliver via door step drops tomorrow Happy Diwali! 🪔🙏🏽❤️ Chintal x RECIPE: 1 tin sweetened condensed milk - 397gms 2 heaped tablespoons ghee/unsalted butter 2 cups milk powder 2 tablespoons milk Pinch saffron (optional) Pinch ground cardamom (optional) Pistachios & rose petals to decorate 1️⃣ Melt the ghee in the microwave, heat the milk & add both to a large bowl with the saffron & cardamom 2️⃣ Stir in the milk powder & condensed milk. Mix well until you have a smooth paste 3️⃣ Microwave mix for 1 minute 4️⃣ Stir REALLY WELL. You want no lumps.. 5️⃣ Repeat steps 3 & 4 twice. STICKY SESAME TOFU & VEGGIE RICE ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ Tonights recipe courtesy of my sous chefs 👦🏻👦🏻 Its my boys’ favourite sticky honey sesame tofu (can also be made with chicken as an alternative) Served with veggie rice (tonight sugar snap peas because thats what we had to use up but can be any veggies of choice) Topped with homegrown spring onions - grown from scraps (see stories for how) #zerowaste #ratemyplateocado @ocadouk @mobkitchen . This is one of our go to quick and easy meals mid week meals - it can be whipped up in under 15 minutes and is a great way to use up any veggies. It is so easy my boys (aged 10 & 8) can make it! Suitable from 12m + but remove the baby portion before adding the honey and soy sauce then suitable for 6M+ . . Recipe: . 250gms rice 200gms sugar snap peas (or broccoli or sweetcorn, peas, babycorn or any veggies of choice) 450gms firm tofu Soy sauce to taste 1-2 tblspns honey 4 heaped tablespoons sesame seeds (+ more to serve) 2 tablespoons sesame oil 2 tablspoons cornflour 2 spring onions . 1️⃣ Boil rice as per instructions 2️⃣ whilst the rice cook, cut the tofu into cubes and toss in the cornflour 3️⃣ Heat 1 tblspn oil in a frying pan, add the tofu and cook a few minutes until crispy, add the soy sauce, honey and sesame seeds and mix well until all the tofu is coated. Its ready! 4️⃣ In another frying pan, pan fry the veggies in a little sesame oil for a couple of minutes. Add the cooked rice, a little soy sauce to taste and stir. SHRIKAND CHEESECAKE ⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ Shrikand is one of my favourite Indian desserts and cheesecake is one of hubbies favourites so I’m delighted to have collaborated with my friend Rishi @dish_by_rish to bring you our fusion Shrikand Cheesecake - perfect for Diwali celebrations! Do check out Rishi’s page for some absolutely amazing vegetarian recipe inspo... he is super talented and makes delicious recipes with easy steps & beautiful photos. His dumplings are on repeat in our house! Delicious saffron and cardamom infused yogurt and cream cheese baked with a cinnamon spiced nutty @lotusbiscoffuk base topped with almonds, pistachios, pomegranate & mini rose buds 🌹 Hope you can try this one - pls do tag us if you do! Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ ⠀⠀⠀⠀ Ingredients: 15cm cheesecake Base: -105g lotus biscoff biscuits -30g toasted cashew -30g toasted almonds -50g ghee/melted butter -1tsp ground cinnamon Shrikhand cheese mix: -360g cream cheese -360g strained greek yogurt -2tbsp boiled milk (20s in microwave) -Pinch of saffron -1tsp ground cardamom -80g icing sugar -2tbsp corn flour Topping: -100g strained greek yogurt -1tbsp boiled milk -pinch of ground cardamom -Pinch of saffron -Sliced pistachios, almonds, pomegranates + rose petals Method: 1️⃣ Preheat oven to 160’C (fan) 2️⃣ For the base, toast your nuts on a pan on low heat for around 5 mins 3️⃣ Blitz your biscuits and nut mix until fine crumbs, add in your ghee/butter and cinnamon 4️⃣ Place into an even layer in your tin and press down to flatten - freeze for 30 mins 5️⃣ For your filling, combine the saffron and the hot milk and allow to infuse 6️⃣ Whisk all the ingredients together until combined, place on top of your frozen biscuit base 7️⃣ Bake for around 35-40 mins. The centre should still be wobbly and the outer rim should have just gone golden brown. Turn off oven and leave door shut for 1hr. Remove from oven and then cool completely 8️⃣ For your glaze, infuse the remaining saffron in hot milk 9️⃣ Mix all ingredients together (except nuts and rose) and spoon onto your cooled cheesecake 🔟 Garnish with the sliced nuts and petals. Refrigerate for a minimum of 2 hrs before serving

BUTTER PANEER ⠀⠀ ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ Think buttery creamy rich gravy flavoured with lots of garlic, ginger & spices topped with some crispy curry leaves fried in ghee 😋 Served with cumin rice, more crispy curry leaves & homemade naan Hope you can try this one... it’s an absolute favourite in our house...I’m trying to focus on positives right now and my kitchen is definitely my happy place ❤️ Recipe for naan coming right up! Chintal x ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ Ingredients: (Serves 4) ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 500gms Paneer + marinade ingredients 4 tablespoons yogurt 1 tsp turmeric 1 tsp Kashmiri chilli powder salt to taste ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 4 tablespoons of ghee/butter/vegan butter (and more to serve - this is butter paneer after all!) 1 stick cinnamon 8 black cardamoms 5 green cardamoms 2-3 tsp minced garlic 2-3 tsp minced ginger 1 tsp ground cumin 1 tsp ground turmeric 1 tsp ground coriander 1-2 tsp Kashmiri chilli powder 100gms tomato purée 1 tsp sugar 75gms cashew nuts soaked in 150mls water for an hour 100mls double cream/vegan alternative 1 tablespoon Dried Kasturi methi ⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀ 1️⃣ Cut your paneer into small cubes & soak in hot water for 15mins to soften. Drain, mix with marinade ingredients & leave in the fridge 1 hour at least or overnight. To cook this - pan fry in a little butter & set aside or bake in an oven at @170’c for 15 mins 2️⃣ Add the ghee to a sauce pan on medium heat with the cinnamon & cardamoms to temper the spices & release the flavours. 3️⃣ Add the garlic & ginger and stir for a minute being careful not to burn the garlic 4️⃣ Next add the turmeric, cumin, coriander & chilli powder. Stir well for 30 seconds and add the tomato purée & about 100mls water & simmer for a few minutes until the oil comes to the surface 5️⃣ add the methi leaves & sugar at this point 6️⃣ Add the oven roasted paneer to the curry 7️⃣ Blend the cashew nuts & water to make a smooth paste - add this to the curry sauce & mix well 8️⃣ Add the double cream, stir & serve with a large knob of butter! 9️⃣ Enjoy! 😋 #drchintalskitchen #indianfood #dckindianfood #indianrecipes
