I have been a General Practitioner in London for over 12 years.  I work with families and children and see a need for family friendly food that is easy to make and enjoyable to eat by the whole family. I often meet parents who struggle to encourage their children to eat nutritious meals or to find the time to make healthy meals at home. They often find themselves cooking separate meals for their children or using readymade meals. I want to empower these families to cook together and make quick, easy, cheap and healthy recipes at home the whole family can enjoy.

Name a better combination than dark chocolate 🍫 & orange 🍊!
I adapted the @bbcgoodfood florentine recipe to make this almond chocolate orange version and it was 😍
I first made these last year when there was the florentine challege on #gbbo so it feels appropriate to make them again now!

Recipe: Makes 20ish

50g salted butter
50g light muscovado sugar
50g  golden syrup
50g  plain flour
50g  chopped candied orange peel
125gms flaked almonds
Zest of 1 orange
200gms  dark chocolate

1️⃣ Heat the oven to 180C (fan)
2️⃣ Line 2 baking trays with baking paper
3️⃣ Melt the butter, sugar and golden syrup in a small saucepan over a low heat, stirring frequently
4️⃣ Remove from the heat and whisk in the flour then add the flaked almonds, candied orange peel & zest
5️⃣ Scoop about 18-20 tablespoons of the mix onto your baking trays - leave space for spread
6️⃣ Bake for 10 mins. Remove from oven & leave to cool
7️⃣ Melt the chocolate in a bowl over a simmering saucepan of water or in the microwave
8️⃣ Dip each florentine into the chocolate mix to cover the base or half & leave to cool on the tray again 
9️⃣ Sprinkle on rose petals - optional

🔹 I’m Chintal, I work as a NHS GP in London & I absolutely love my job (except for during this pandemic - I have found these last 18M V V V HARD!)

🔹 I am a mum of 2 boys 👦🏻👦🏻 they are my inspiration, my sous chefs & my besties!

🔹 I came to the UK as a young girl (this is a story for another day) grew up in Hampshire and moved to london for University @ucl , met my husband and haven’t left London since!

🔹 I share lots of quick and easy recipes I hope anyone can cook at home with simple ingredients (plus lots of spices - I love spices!)

🔹 I am proud of my Indian heritage and try to showcase Indian recipes but when it comes to food, I also love experimenting and exploring all cultures

🔹 I host cookery classes both privately & @waitrose cookery school - I am hoping we can restart these again soon 🙏🏽

🔹 As a working mum, I never have time for separate meals so I adapt my recipes to be suitable for the whole family

How are you all?
Been a bit awol on here recently - I am just about juggling managing work/kids/life 🤪
Anyone else feel like they are constantly dropping the balls?  Some easy recipes coming up that I hope will help 🥰

I hope you had a lovely half term break for those who managed a break.  We enjoyed a lovely #staycation in sunny Eastbourne!  Whilst I would have rather been on a beach in the Malidves 🏝 It’s actually amazing how beautiful parts of the UK coastline are and lovely to explore so many more!

Recipe: makes 10

1/3 a tin condensed milk
300mls double cream
50mls mango/fruitpuree 
Sprinkles of choice - I used crushed pistachios & rose petals

Whip up all the ingredients until you have stiff peaks
Optional extra: fold in chopped strawberry or finely chopped fruit of choice
Spoon into your moulds & leave to set
Enjoy 😋

Sage, onion, carrot 🥕, spinach & halloumi fritters topped with a poached egg 😍 
Would you like a reel on making the perfect poached egg btw? 

A great way to add in veggies & colour at breakfast time... you can easily switch up the veggies for whatever is seasonal at the time 🤗
🌱 Vegan - skip the halloumi (the recipe still works) & top with avocado 🥑

👩🏻‍🍳 RECIPE: (makes about 8-10)

1 medium carrot 
8 balls/cubes frozen spinach leaves (defrosted and cooked in the microwave for a few minutes)
125gms halloumi 
1/2 a red onion - finely chopped
Few sage leaves (Skip or use any other herb 🌿)
2 tablespoons flour 
1 egg
Salt & pepper to taste
Rapeseed oil to fry .

Grate the carrot and halloumi, cook the spinach in the microwave & squeeze out the water
Add all the ingredients together in a bowl and mix well
Form small fritter shapes using your hands and fry in a little oil for 2-3 mins each side - eat right away for delicious crispy fritters!  Enjoy 😋

I swap out the honey for ripe bananas (added prebiotic fibre) and coconut oil for peanut butter (protein, fibre, healthy fats) in this granola.  Steps coming up in my stories shortly as my reels are playing up 😩

April is #bowelcancerawarenessmonth and a diet high in fibre is key to a healthy bowel and reducing your risk of bowel cancer.  So here is my gut healthy, fibre loaded, no added sugar granola, served with live yogurt for extra probiotics!

My lovely friends over @vegetarianhotspots & @doctorsgetcancertoo asked me to come up with a gut healthy fibre loaded recipe that anyone can make (including kids!) 
So I hope this fits the bill Anisha & VHS! 😘

Recipe:

2 very ripe bananas
2 cups oats 
1 cup mixed nuts (I used cashew, pistachio & almonds)
1 cup mixed seeds (I used chia, sunflower & linseed)
2 tablespoons runny peanut butter 
2 tsp cinnamon 

1️⃣ Mash the 🍌 well to a pulp in a large bowl
2️⃣ Add the rest of the ingredients & mix well
3️⃣ spread out flat on a baking tray 
4️⃣ Bake in a oven @ 180C (fan) for 15-20mins
5️⃣ After 10 mins remove tray, mix and break up any large lumps
6️⃣ Repeat again at 15 mins
7️⃣ Switch of the oven and open the door slightly & allow mix to cool in the oven 
8️⃣ Serve with milk or yogurt

Think buttery creamy rich gravy flavoured with lots of garlic, ginger & spices topped with some crispy curry leaves fried in ghee 😋
Served with cumin rice, more crispy curry leaves & homemade naan 

Hope you can try this one... it’s an absolute favourite in our house...

Ingredients: (Serves 4)
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
500gms Paneer + marinade ingredients 
4 tablespoons yogurt 
1 tsp turmeric
1 tsp Kashmiri chilli powder
salt to taste 
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
4 tablespoons of ghee/butter/vegan butter (and more to serve - this is butter paneer after all!)
1 stick cinnamon 
8 black cardamoms
5 green cardamoms
2-3 tsp minced garlic 
2-3 tsp minced ginger 
1 tsp ground cumin 
1 tsp ground turmeric 
1 tsp ground coriander 
1-2 tsp Kashmiri chilli powder 
100gms tomato purée
1 tsp sugar 
75gms cashew nuts soaked in 150mls water for an hour 
100mls double cream/vegan alternative 
1 tablespoon Dried Kasturi methi 
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀
1️⃣ Cut your paneer into small cubes & soak in hot water for 15mins to soften. Drain, mix with marinade ingredients & leave in the fridge 1 hour at least or overnight.  To cook this - pan fry in a little butter & set aside or bake in an oven at @170’c for 15 mins 
2️⃣ Add the ghee to a sauce pan on medium heat with the cinnamon & cardamoms to temper the spices & release the flavours. 
3️⃣ Add the garlic & ginger and stir for a minute being careful not to burn the garlic 
4️⃣ Next add the turmeric, cumin, coriander & chilli powder.  Stir well for 30 seconds and add the tomato purée & about 100mls water & simmer for a few minutes until the oil comes to the surface 
5️⃣ add the methi leaves & sugar at this point 
6️⃣ Add the oven roasted paneer to the curry
7️⃣ Blend the cashew nuts & water to make a smooth paste - add this to the curry sauce & mix well
8️⃣ Add the double cream, stir & serve with a large knob of butter! 
9️⃣ Enjoy! 😋

Instagram post 17912624431665210 Every year I set myself the task of creating an imposible birthday cake for my boys... it usually takes hours of modelling cake & fondant icing into some kind of shape that vaguely resembles the ‘google’ cake they have chosen and working into the early hours of the morning.  I literally devote days to this task annually!

This year, Yash, with his second lockdown birthday, simply requested... a chocolate orange cake with a whole chocolate orange on top... I mean sounds simple right?  What could go wrong?  Then for some reason I managed to turn chocolate orange ganache into a gloop twice 😭 How? I have made it so many times before!! (You can see the congealed mess in stories)
1/2 a kilo of delicious dark chocoate later - it had to be used...I had no other option... I was so upset 😞
My cake was a disaster.

My little man came running down in the morning, he didnt even notice the conglealed ganache... instead the only thing he said was ‘Wow!  Amazing - I love it mummy!!! ... Wow you made a waterfall with chocolate orange eggs too!!!!’ 
Just like that.. my cake was perfect again
If only we could see everything through the eyes of a child 🥰🥰🥰

I’m throwing it back to a family favourite for #britishpieweek .... homemade chicken tikka masala & spinach pie....mild enough for the whole family (suitable from 6m+) to enjoy because who wants to make separate meals 🤷🏻‍♀️
Swap out the chicken for paneer or tofu for a plant based 🌱  version 
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
If you don’t fancy a pie you can just make the curry and enjoy it with rice or naan 🙂

👩🏻‍🔬 Recipe: (serves 4) 🌱 vegetarian option add paneer .
.
500gms chicken breast or paneer - chopped 
1 large red onion - finely chopped 
250gms baby spinach leaves 
1 teaspoon coconut oil 
1 cinnamon stick
5 Black cardamoms 
4-5 cloves garlic - minced
4cm ish chunk ginger - minced 
1 heaped tsp  cumin seeds 
1-2 tsp turmeric
1-2 tsp ground coriander powder
1- 2 tsp garam masala (skip if you would like it milder)
140gm tin tomato purée 
1 large handful coriander - finely chopped 
100mls double cream or coconut milk 
Fry the red onion in the oil.  Add the cinnamon stick, black cardamoms & cumin seeds.  When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2🌶 if you like it spicy. 
Stir for a couple of minutes. 
Add your choice of protein & brown
Finally, add a 140gm tin of tomato purée, 1 pint of water, the spices &  a handful of chopped coriander. 
Simmer for about 20 - 30 minutes until cooked.  Add a little water if the sauce seems too dry.
Stir in the washed baby spinach leaves and cook for a couple of minutes to wilt them
Just before serving stir in about 100mls of double cream or coconut cream if dairy free 
To turn it into a pie, just cool the curry down and keep it in the fridge.
When ready, pour into an oven proof dish and cover with a layer of puff pastry - (I used 200gms ready made @jus_rol rolled out thinly to cover my dish
Brush with some egg wash
Sprinkle with Nigella seeds 
Bake in the oven @200’C for 20 mins

Serve with a slice of buttery sourdough 😋
Omelette’s are a delicious quick & easy way to incorporate more veggies into your diet.  I just throw in what ever veggies I have in the fridge or freezer on the day.
Add a little spice & voila 👌🏽

Recipe:
⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀ 
🥚 3 eggs @clarence_court 
🍅Handful of cherry tomatoes @iowtomatoes 
🌿 Handful of baby spinach leaves
 🥦 4 Tender stem broccoli @tenderstem 
🧅 A small chunk sliced red onion 
💛1 teaspoon turmeric 
🪴 Few sprigs chopped coriander 
🌶 Salt, pepper & chilli flakes to taste
1/2 teaspoon oil to cook 
🧀 optional sprinkle on some grated cheese .
⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀ 
Whisk up the eggs, add in the veggies, 
Heat oil in frying pan 
Pour in the mix, sprinkle on cheese cook couple of minutes
Pop under a grill to finish cooking for 1-2 minutes & watch it magically double in size 😍
Enjoy!

Crispy prawns (defo works with vegan prawns too) with a spicy gochujang mayo was a total winner for the whole family - we love a #fakeaway option in our house!  I served this alongside some salt and pepper tofu, homemade sushi and pretended I was sitting in @zumalondonofficial

Quick & easy lunch bowl enjoyed by the whole family... with a special helping of my crispy chilli oil 🌶 (I did say I put it on everything!)
Literally takes minutes to put together & my kids love it! 
Just what we needed after some fun in the snow ❄️ ⛄️ 
For a vegan option - swap the boiled eggs for tofu or veggies of choice 🥬🍆🌽🥒
I've also made my 'on the go' noodle pot version of this soup ready for work tomorrow - just pour in hot water and lunch is ready!

Recipe: (serves 4)

To make your soup base - add 2 heaped tablespoons of miso paste to 1 litre of boiled water/vegetable/chicken stock in a large saucepan on a medium heat
Add your noodles of choice (if using instant packet noodles - add in the flavour sachet instead of a stock cube)
If using water add a stock cube
Boil until noodles cooked, pour into 4 bowls 
Top your ramen with whatever you like! Ive used some charred baby pak choy, boiled eggs, spring onions, chilli, seaweed & sesame
