I have been a General Practitioner in London for over 12 years.  I work with families and children and see a need for family friendly food that is easy to make and enjoyable to eat by the whole family. I often meet parents who struggle to encourage their children to eat nutritious meals or to find the time to make healthy meals at home. They often find themselves cooking separate meals for their children or using readymade meals. I want to empower these families to cook together and make quick, easy, cheap and healthy recipes at home the whole family can enjoy.

Super simple to make ... I think these are the perfect decadent sweet to celebrate Diwali.  Super soft  barfi inside with a delicous dark chocolate coating - I can’t wait to make them again to share with my family ❤️

One of our favourite family curries and one I will definitely be cooking over the Diwali festive period... decadent & delicious this recipe does take a bit longer than my usual recipes to make but trust me... it’s definitely worth it 🥰

Think buttery creamy rich gravy flavoured with lots of garlic, ginger & spices.  Must be served with an extra blob of melting butter 👌🏽

I served it with cumin rice with crispy curry leaves (fried in ghee 😍) & homemade naan for an Atham feast over the weekend...

Ingredients: (makes 8)
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀
300gms porridge oats
100gms ish Honey/golden syrup 
100- 150gms Brown sugar 
150gms Butter/Vegan alternative 
100gms ish dark chocolate or 
100gms ish blueberries/raspberries 
About 6 tablespoons strawberry jam 
1 lined baking loaf tin 

⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀ 
1️⃣ Pre heat the oven to 180’C.  Melt the butter in a saucepan, add the sugar and honey and allow the sugar to melt on a low heat 
2️⃣ When the sugar has melted in, add the oats and mix well
3️⃣ pour half the mix in your baking tray and press down well
4️⃣ Add your jam and berries or chocolate layer 
5️⃣ Top with the rest of the oats and press down well 
6️⃣ Bake in the oven @180’C for 30 mins 
7️⃣ Allow to cool FULLY before taking out of the baking tin ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀

I’m Chintal... I am a NHS Doctor 👩🏻‍⚕️ - a GP in London, a wife & a Mum of 2 gorgeous boys aged 10 & 8.  I absolutely LOVE cooking and writing... it’s always been a lifelong dream of mine to write a cookbook & share my love of cooking 📚

Topped with a caramelised banana & a little white choc drizzle... (Also his idea obvs!)

Recipe: 
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀
65gms plain flour
2 eggs
100mls milk
1 tsp vanilla extract
1 teaspoon cacao powder 
1 banana
2 tablespoons light olive oil 
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀
1️⃣ preheat the oven to 200’C fan, pour the oil into your skillet and place it in the oven to heat up.
2️⃣ To make the mix, put the flour in a bowl
3️⃣ make a well in the middle
4️⃣ crack in the eggs and add the rest of the ingredients 
5️⃣ whisk together to make a batter 
6️⃣ Remove the hot skillet from the oven and pour in the batter it should sizzle in the hot oil 
7️⃣ Put the skillet back in the oven for 20 minutes to bake at 200’C
8️⃣ Whilst it cooks, slice the banana in half and pan fry on a medium hear for a few minutes each side to caramelise 
9️⃣ When the pancake is cooked, too with the banana & serve
🔟 Optional add a dusting of icing sugar and drizzle of white chocolate to serve 😋

Throwing it back to my favourite brownies... because everything is better when stuffed with peanut butter 😍😋
⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀
As london moves to Tier 2 this weekend I guess I’ll be baking more brownies - who’s joining me?!

RECIPE: the brownie part is from @bbcgoodfood - it’s the best brownie mix ever so no point trying to improve it - trust me on this one! 
⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀
350gms (ish) peanut butter - depends on how thick you want your layer of peanut butter
185gms unsalted butter
185gms dark chocolate @lindtuk 
85gms plain flour
40gs cacao powder 
100gms white chocolate
3 large eggs
275gms golden caster sugar
⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀
1️⃣ First line your baking tin with Some baking paper and load on a thin layer of peanut butter (about 250gms if it to make a thin layer) - I used my favourite @pipandnut smooth peanut butter...freeze this layer until solid & save for later
2️⃣ Now for the brownie mix - break the dark chocolate into small chunks and melt with the butter in a microwave, 1 min at a time into its fully melted. Leave to cool
3️⃣ Preheat oven for 160’c fan & grease/line a 20cm square baking tin
4️⃣ whisk the eggs & sugar with an electric whisk until the mixture doubles in volume and is thick & creamy
5️⃣ Pour the cooled chocolate/butter mix into the egg/sugar mix and gently fold to mix 
6️⃣ Sieve the flour and cacao powder and gently fold this into the mix too
7️⃣ Roughly chop the white chocolate and add to the mix
8️⃣ Be careful to fold in the ingredients gently so as to not knock out all the air 
9️⃣ Pour half the mix into baking tin & then add your frozen layer of peanut butter & finally the other half of the brownie mix
🔟 Bake in oven for about 25 mins - check and add a few mins if needed.  It should have a shiny papery crust & the sides just beginning to come away⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀

Pumpkin season is well and truly here so I’m sharing a quick & easy soup recipe for you  today - my pumpkin & sweet potato soup 
This was the recipe 2 years ago that persuaded my children that pumpkins are not just for carving but can also be eaten so I hope you enjoy it! 
Perfect for a cold and wet #meatfreemonday in London

Serving soup in mini pumpkin 🎃 bowls is entirely optional but highly recommended to increase compliance 😉

Recipe: (serves 4)
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
2 teaspoons cumin seeds
1 tablespoon olive oil
1 red onion - finely chopped
4-5 cloves garlic - finely chopped
2 medium sized sweet potatoes 🍠 (about 250gms) - peeled and roughly chopped
Roughly same amount of pumpkin flesh - roughly chopped (about 1 mini pumpkin) 🎃 (I just roasted 2 small pumpkins as seen in the oven at 180’c with a little olive oil until soft & scooped out the flesh to use - keep the skin for a bowl )
1 pint fresh vegetable stock/ or cube - I use @saykallo low salt veg cube
Juice of 1/2 a lime - more to taste
1 teaspoon smoked paprika
1 red chilli 🌶 (optional - omit for kids)
Salt & pepper to taste
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
Fry the onion, cumin, garlic in olive oil until soft. Then add all the other ingredients, cover in vegetable stock (add extra water if needed) and simmer for about 30 mins. Once fully cooked blend to smooth and sprinkle with the toasted pumpkin seeds, paprika & serve with a slice of delicious sourdough 🥖

P.S. Don’t waste the pumpkin seeds - toss in a little olive oil with a pinch of garlic salt, chilli powder & smoked paprika to sprinkle on top

For today’s #nationalcurryweek instalment  I’m throwing it back today to a family favourite.... homemade chicken tikka masala & spinach pie....mild enough for the whole family to enjoy because who wants to make separate meals 🤷🏻‍♀️
Swap out the chicken for paneer or tofu for a plant based 🌱  version

If you don’t fancy a pie you can just make the curry and enjoy it with rice or naan 🙂

👩🏻‍🔬 Recipe: (serves 4) 🌱 vegetarian option add paneer .
.
500gms chicken breast or paneer - chopped 
1 large red onion - finely chopped 
250gms baby spinach leaves 
1 teaspoon coconut oil 
1 cinnamon stick
5 Black cardamoms 
4-5 cloves garlic - minced
4cm ish chunk ginger - minced 
1 heaped tsp  cumin seeds 
1-2 tsp turmeric
1-2 tsp ground coriander powder
1- 2 tsp garam masala (skip if you would like it milder)
140gm tin tomato purée 
1 large handful coriander - finely chopped 
100mls double cream or coconut milk 
Fry the red onion in the oil.  Add the cinnamon stick, black cardamoms & cumin seeds.  When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2🌶 if you like it spicy. 
Stir for a couple of minutes. 
Add your choice of protein & brown
Finally, add a 140gm tin of tomato purée, 1 pint of water, the spices &  a handful of chopped coriander. 
Simmer for about 20 - 30 minutes until cooked.  Add a little water if the sauce seems too dry.
Stir in the washed baby spinach leaves and cook for a couple of minutes to wilt them
Just before serving stir in about 100mls of double cream or coconut cream if dairy free 
To turn it into a pie, just cool the curry down and keep it in the fridge.
When ready, pour into an oven proof dish and cover with a layer of puff pastry - (I used 200gms ready made @jus_rol rolled out thinly to cover my dish
Brush with some egg wash
Sprinkle with Nigella seeds 
Bake in the oven @200’C for 20 mins

Recipe: Hummus

1 tin (400gms) organic chickpeas 🥫 @mr_organic 
1 clove garlic
1 tablespoon tahini
1/2 lemon squeezed 🍋 
4 tablespoons of extra virgin olive oil 
Salt to taste

It’s also a great way to get kids in the kitchen - my boys love making them!

Recipe:

30 gyoza wrappers (ready made or make your own)
150gms prawns (or shiitake mushrooms 🍄 finely chopped)
4 spring onions - finely chopped 
1 teaspoon fresh grated ginger 
2-3 cloves garlic - minced
Soy sauce to taste 
2 large handfuls of baby spinach - finely chopped 
1 teaspoon sesame oil .
Fry the spring onions in the oil, add garlic, ginger & prawns.  Season with soy sauce  pans fry for a few minutes.  Next stir in the spinach to wilt it very slightly.
Fill into the dumpling wrappers & fold away
Steam/pan fry as desired...😋
Skip the chilli and soy for young kids but otherwise suitable for all ages 6 + after first foods

These almond and blueberry muffins are a delicious breakfast or after school snack for hungry children... the sweetness comes from just the fruit only with no added sugar so suitable for all ages!
I like to use ground oats making them also #glutenfree but you can use plain flour if you prefer

Recipe: (makes 12)
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
3 RIPE bananas
100gms ground almonds 
100gms ground oats/plain flour 
1 tsp baking powder 
3 eggs (vegan - use chia eggs) 
50gms butter 
200 -300gms blueberries - ( I used 300gms but hubbie said there were too many 🤷🏻‍♀️)
Add 1/2 teaspoon of cinnamon if you like a little spice 😋
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ preheat oven to 170’C (fan) & Melt the butter in the microwave to soften 
2️⃣ mash the bananas 
3️⃣ whisk the eggs and add to the bananas mix well
4️⃣ add the rest of the ingredients to the banana/egg mix
5️⃣ Pour mix into 12 muffin moulds 
6️⃣ Bake for 12-15 minutes until cooked through 
7️⃣ cool & enjoy!

Indian Street Food at its best! 🙌🏽
If you haven’t heard of them... Pani Puri are crispy hollow ‘Puri’ filled with chickpeas, potato & onion spiced up with a tamarind chutney 
The ‘pani’ which means ‘water’ is a sweet and spicy tangy water that is poured onto the stuffed Puri just before eating...
You basically get a flavour explosion in your mouth of sweet, spicy, tangy, sour all in one

Large handful of fresh mint leaves

Top up to 500mls with water

Recipe: (Makes 35-40 mini 🍪)
⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
60gms cacao or cocoa powder - sieved
200gms caster sugar
60mls  oil - I used olive oil
2 eggs
180gms plain flour 
1 tsp baking powder
70gms icing sugar
Pinch of salt 
⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Mix they cacao, sugar & oil in a bowl
2️⃣ Add the eggs 1 at a time and whisk to mix in well
3️⃣ Add the other ingredients (except icing sugar) into a bowl, mix & then add the the cacao mix 
4️⃣ Form a dough with the mix
5️⃣ Put dough in the fridge for 1 hour 
6️⃣ Heat the oven to 170’C (fan)
7️⃣ Remove the dough, roll into small
Balls, coat in the icing sugar & place on a baking tray lined with baking paper
8️⃣ Bake for 10 mins
9️⃣ Enjoy once cool!

500gms Yogurt - I used @yeovalley vanilla yogurt.  For a vegan option - use @coyo_uk coconut yogurt 
200gms blueberries (you can use fresh or frozen)
A squeeze of honey or maple syrup - optional - avoid both for under 12months.

1️⃣ Put all ingredients into a blender 
2️⃣ blend to smooth
3️⃣ pour into a mould 
4️⃣ freeze for a couple of hours or overnight to set!

Recipe: Serves 4
⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 
500gms paneer - cubed
1 large red onion - finely chopped 
250gms baby spinach leaves 
1 teaspoon coconut oil 
1 cinnamon stick
5 Black cardamoms 
4-5 cloves garlic - minced
4cm ish chunk ginger - minced 
1 heaped tsp  cumin seeds 
1-2 tsp turmeric
1-2 tsp ground coriander powder
1- 2 tsp garam masala (skip if you don’t want it too spicy or if making for young children/toddlers)
140gm tin tomato purée 
1 large handful coriander - finely chopped 
100mls double cream or coconut cream

⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
1️⃣ Fry the red onion in the oil. 
2️⃣ Add the cinnamon stick, black cardamoms & cumin seeds. 
3️⃣ When the onions are starting to brown (I like them a little dark so they melt into the sauce) add the garlic, ginger & a chopped chilli or 2🌶 if you like it spicy. 
4️⃣ Stir for a couple of minutes. 
5️⃣ Add your choice of protein & brown
6️⃣ Finally, add a 140gm tin of tomato purée, 1 pint of water, the spices & a handful of chopped coriander. 
7️⃣ Simmer for about 20 - 30 minutes until you have a thick gravy. Add a little water if the sauce seems too dry.
8️⃣ Stir in the washed baby spinach leaves and cook for a couple of minutes to wilt them
9️⃣ Just before serving stir in about 100mls of double cream or coconut cream if dairy free. 
🔟 Enjoy 😋
Top tip: soak your paneer cubes in hot water for 10 mins before using - it makes them super soft 👌🏽

Raksha Bandan is a Hindu festival where we tie rakhris on the wrists of our loved ones to protect them and to bring them blessings and happiness for the coming year.  We also traditionally exchange sweet dishes like this barfi 😋

👩🏻‍🔬 Recipe: (makes 16)

2 tablespoons coconut oil 
4 -5 tablespoons maple syrup/honey 
60gms oats - ground
60gms cashew nuts - ground
60gms almonds - ground 
30gms desiccated coconut 
80gms cashew butter 
3 drops cardamom extract @holylamaspicedrops or 1/4 tsp ground cardamom powder
100gms dark chocolate 🍫 (I used 70% @lindtuk but you could use vegan option too)
Edible rose petals & more desiccated 🥥 ✨ to decorate 
⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ 
1️⃣Warm the coconut oil,maple syrup & cashew butter in a heavy pan. 
2️⃣Add all the other ingredients (except the chocolate & decorations) and stir until all the mixture comes together.
3️⃣ Flatten into a glass Pyrex dish (12 x 20cm approx) or silicone mould. 
4️⃣ When cool, melt the chocolate in the microwave 🍫 and pour a layer over the barfi mix
5️⃣ Sprinkle on the edible rose 🌹 petals & coconut and leave to set. 
6️⃣ When set, cut into cubes and enjoy 💕

Recipe: (Makes 4)
⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 
1 tin of mango pulp 🥭 (or about 300mls mango purée if using fresh or try @eastendfoodsuk mango pulp tin)
350mls double cream 
100mls milk 
40gms sugar
2 sheets gelatine I used @droetkerbakes (veggie gelatine 🌱 can be used but you need to make sure it’s fully dissolved or it won’t set)

1️⃣ Soak the gelatine in cold water for 5 mins
2️⃣ Pour the cream, milk, sugar, 100mls mango purée into a saucepan and mix well
3️⃣ Heat the mixture, bring to a simmer and take of the heat
4️⃣ Squeeze out the excess water from the gelatine sheets and add to the pan, stir to dissolve fully 
5️⃣ Pour the mix into 4 ramekins, cool and leave to set in a fridge for a couple of hours
6️⃣ to serve leave in ramekin or tip out onto a plate and top with more mango purée/chopped mango 🥭 
7️⃣ Top tip: if it doesn’t tip out easily - dip the ramekin in a bowl of warm water to loosen it
8️⃣ Top tip 2: make double - it’s addictive 😋
9️⃣ Enjoy! 😋

Recipe: (Serves 4)

1 large red onion 
1 tablespoon olive oil
1 teaspoons mustard seeds
2 teaspoons cumin seeds
5 black cardamoms @eastendfoodsuk 
2 teaspoons minced ginger (about 4cm chunk grated or minced)
4 cloves garlic finely chopped
2 teaspoons turmeric @rajahspices 
1-2 chillis (optional) 🌶 
I tin finely chopped tomatoes or 140gm tin purée
4 corn on the cob halved🌽 
Or 500gms frozen sweetcorn @birdseyeuk or a mix of both 
1 tin coconut cream 🥥 @bionaorganic 
250gm bag baby spinach leaves 
Large handful fresh coriander leaves - chopped 
salt to taste .
First fry the onion, mustard seeds & cardamoms in oil until almost translucent & the mustard seeds start to pop
Next add the cumin, garlic, ginger & chilli. Stir for a minute on low heat being careful not to brown the garlic.
Next add all the rest of the ingredients except the coconut cream, cover with a lid and leave to simmer for about 10-12 minutes until the sweetcorn is fully cooked.  Take the lid of and cook away any excess water until you get a thick gravy. Add the spinach leaves and cook for a minute or 2 to wilt the leaves.
Finally stir in the coconut cream, sprinkle on some more coriander & simmer for a few minutes.  Serve with hot naan, rice or chapattis

One question that cropped up was the use of spices in children’s cooking.  As a NHS GP, I work with families and children including an incredibly diverse ethnicity population.  Its interesting how different cultures view their childrens’ diets particularly when it comes to the addition of spices.  Some of my patients wouldn’t bat an eyelid at adding a variety of spices to their child’s weaning journey.  Others, are surprised at my suggestion, associating spice with chilli 🌶, fire or heat 🔥 rather than flavour.

Since the beginning of lockdown we have been lucky to have the most amazing Indian food made for us by grandparents ❤️... Whenever we drop their shopping to them we pick up Tupperwares full of homemade food

This has been a such a great help for me balancing work and feeding the family.... so many delicious traditional Indian dishes that I might not always have time to make and my children now ask for an ‘Indian breakfast’ every day 😂

Here’s one of our favourites... Pudla.... chickpea flour savoury pancakes.  We made them for breakfast yesterday using frozen peas and sweetcorn but you can add in any vegetables and it’s a great way to get those veggies in at breakfast time 🙌🏽

My top tip - if you want crispy pancakes grate the veggies or chop super finely .

My kids like these with a small dollop of ketchup 🤷🏻‍♀️ to dip them in but I love them with my coriander & mint chutney (search #dckindianfood for the recipe) or use @nanaschutneys coriander chutney - it’s delicious! .

Recipe: makes 10

300gms chickpea flour (besan/gram flour)
400mls water approx -adjust according to the veggies used for a thick batter
1.5 teaspoons turmeric 
handful coriander - finely chopped 
1 small red onion finely chopped 
300-500gms of baby veggies of choice all finely chopped or grated (I used baby corn, spinach leaves, courgettes, asparagus, broccoli & green beans)
Salt to taste
Oil to fry
Simple mix the flour, turmeric, salt & water to form a batter.  Add in the veggies and stir well.
Spray a pan with oil
Spread about 3 tablespoons of batter as thin as possibly and fry on a medium heat for a few minutes each side 
Adjust the heat to cook through but not burn the pancakes .

I’ve never really cooked Turkish or Cypriot food at home until I discovered Meliz’s account but she makes it look so easy.  I’ve tried so many of her recipes now and they have been enjoyed by the whole family!

I am SO excited she’s going to be teaching us a how to make her mums traditional Revani recipe - a delicious semolina cake, topped with almonds and drenched in a rose 🌹 syrup - I can’t wait to make it!

I’ll be making my mums traditional Gujarati dessert called Shrikand.  Shrikand is a sweet strained yogurt with nuts and fruit, spiced with cardamom and saffron.  Yum 😋

#throwbackthursday to my favourite brownies incase you need an excuse to get baking today! 😋
Serve warm with some vanilla ice cream or a blob of clotted cream 😋

350gms (ish) peanut butter - depends on how thick you want your layer of peanut butter
185gms unsalted butter
185gms dark chocolate @lindtuk 
85gms plain flour
40gs cacao powder 
100gms white chocolate
3 large eggs
275gms golden caster sugar

1️⃣ First line your baking tin with Some baking paper and load on a thin layer of peanut butter (about 250gms if it to make a thin layer) - I used my favourite @pipandnut smooth peanut butter...freeze this layer until solid & save for later
2️⃣ Now for the brownie mix - break the dark chocolate into small chunks and melt with the butter in a microwave, 1 min at a time into its fully melted. Leave to cool
3️⃣ Preheat oven for 160’c fan & grease/line a 20cm square baking tin
4️⃣ whisk the eggs & sugar with an electric whisk until the mixture doubles in volume and is thick & creamy
5️⃣ Pour the cooled chocolate/butter mix into the egg/sugar mix and gently fold to mix 
6️⃣ Sieve the flour and cacao powder and gently fold this into the mix too
7️⃣ Roughly chop the white chocolate and add to the mix
8️⃣ Be careful to fold in the ingredients gently so as to not knock out all the air 
9️⃣ Pour half the mix into baking tin & then add your frozen layer of peanut butter & finally the other half of the brownie mix
🔟 Bake in oven for about 25 mins - check and add a few mins if needed.  It should have a shiny papery crust & the sides just beginning to come away

This is now a family favourite and I can’t believe it’s taken me so long to discover how to to make homemade pasta - it really does taste so much better! 
Thank you Masha for making it look so easy... I’m still practicing but not bad for my third attempt ever!

Spinach & Ricotta Ravioli with Butter & Sage 
(4-6 people)
 
Ingredients
For the filling
200gr Frozen Spinach, defrosted
250gr Ricotta
50gr Grana Padano
25gr Breadcrumbs
2gr Nutmeg 
Pinch of Salt
Pinch of Pepper

For the pasta dough
50gr Fresh Spinach, boiled
200gr 00 Flour
20gr Semolina flour
1 Egg
Pinch of Salt

For the sauce
30gr Butter
20 leaves Sage
50gms parmigiana reggiano

Celebrating the end of mango 🥭 season with our families current obsession... Mango panna cotta ... Thank you @bbcgoodfood for another super delicious recipe .... I just added a little mango instead of vanilla 🥭 😋

Here’s the best bit... even when mango season ends you can pick up a can of mango pulp in all large supermarkets and it works just as well with a tin🥫

Recipe: (Makes 4)
.
.
1 tin of mango pulp 🥭 (or about 300mls mango purée if using fresh
350mls double cream 
100mls milk 
40gms sugar
2 sheets gelatine I used @droetkerbakes (veggie gelatine 🌱 can be used but you need to make sure it’s fully dissolved or it won’t set)
Edible gold sheets totally optional but worth it to see my children’s faces 🥰

1️⃣ Soak the gelatine in cold water for 5 mins
2️⃣ Pour the cream, milk, sugar, 100mls mango purée into a saucepan and mix well
3️⃣ Heat the mixture, bring to a simmer and take of the heat
4️⃣ Squeeze out the excess water from the gelatine sheets and add to the pan, stir to dissolve fully 
5️⃣ Pour the mix into 4 ramekins, cool and leave to set in a fridge for a couple of hours
6️⃣ to serve leave in ramekin or tip out onto a plate and top with more mango purée/chopped mango 🥭 
7️⃣ Top tip: if it doesn’t tip out easily - dip the ramekin in a bowl of warm water to loosen it
8️⃣ Top tip 2: make double - it’s addictive 😋
9️⃣ Enjoy! 😋

My kids absolutely loved these little rice cups filled with tuna/salmon and sweetcorn, topped with chives and pepper flowers 💐 
Such a fun idea and perfect for lunch boxes too 🙌🏽 
You could pretty much fill them with anything to keep them vegetarian 🌱

I’ve been struggling with making lunches more interesting these days so I couldn’t wait to try these cute little rice cups by @white.blank.space when I saw them on her page.  Heejee used purple sweet potato powder to colour hers & check out her page for the recipe - but I used my usual baby kale 🥬 & a muffin tray to mould (hence they are not as neat as her version 😂)

Feeling fancy today with tuna tartare for lunch 😋
Vegan 🌱 option try - cooked beetroot - it’s delicious!!
Super easy, fresh & served with some seeded @ryvitauk thins
I stole this recipe from my cousin @dhruptij & it’s now a regular in our house - even the kids eat it (without the avocado 🥑 🙄🤷🏻‍♀️)

Recipe: (serves 4)

250gms fresh sushi grade tuna (or cooked beetroot)
2 avocados 🥑 
1 tablespoon sesame oil
1 tablespoon soy sauce
1 lime - juice 
1 spring onions - finely sliced 
1 tablespoon sesame seeds - toasted (more to top)
1/4 tsp Japanese shuchimi togarashi (7 spice blend) or chilli flakes

1️⃣Peel and chop the avocado finely, add a squeeze of lime (and optional chopped coriander and set aside)
2️⃣ Finely chop the tuna into small cubes
3️⃣ In a bowl mix the oil, soy, lime juice, spring onions, chilli & sesame seeds to make the sauce 
4️⃣ Add the tuna to the sauce and mix well 
5️⃣ Using a mould, plate your tartare with a layer of avocado and then the tuna mix
6️⃣ sprinkle on a little more sesame seeds and chilli to serve 
7️⃣ Serve as it is or with some ryvita thins 
8️⃣ Enjoy! 😋

Wow! What a week of sunshine ☀️ we are having in London! 
I’m guessing everyone is firing up the BBQ in this scorching weather... so here’s a vegan kebab option for you to try 🤗

When I saw this recipe on my friend @gayatriisingh ‘s blog (check out her page & blog for some really amazing recipes btw)  I knew I had to try it! I adapted it slightly because I didn't have potatos so I used sweet potato instead & it was given a big thumbs up by all the family! 🙌🏽

I served the kebabs in a homemade naan (see a few posts down for the recipe) with salad (from my garden!) & pickled onions 😋
.

RECIPE: .
200g curly kale or cavolo nero
300g boiled mashed sweet potato 
80g toasted chickpea flour (you might need more)
50g chopped/ground almonds
1 tbsp each cornstarch and rice flour
1-inch ginger grated
2-3 cloves of garlic finely crushed
Green chilli to  tastE
Salt to tastE
Handful  chopped coriander 
1 tsp chaat masala
½ tsp garam masala
Spray oil to bake .

Heat oil in a pan, add in the finely chopped kale, ginger and garlic. On a low medium heat cook for 5 minutes. Now place the kale in a colander so the water drips, squeeze out all the water from the kale. 
In a mixing bowl, place the kale, crushed potatoes, almonds and all the spices mentioned above with salt. Add all the flour, mix well. You might need to add more chickpea flour if the kale is too watery. 
Make firm kebabs on a skewer & brush with a little oil on all sides. 
cook on the BBQ or pop them in the oven @ 180’c for about 15-20 minutes
